Ingredients
- 3 tablespoons butter
- 1 onion, diced
- 2 large carrots, diced
- 3 stalks celery, diced
- 1 (28 ounce) can whole peeled tomatoes, chopped, juice reserved
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon dried parsley
- 3 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 2 quarts beef broth
Instructions
- In a large pot over medium heat, melt butter. Cook onion, carrots and celery until onion is translucent. Stir in tomatoes with their juice, salt, pepper, parsley, soy sauce, Worcestershire and paprika. Pour in beef broth. Bring to a boil, then reduce heat and simmer 30 minutes, until vegetables are tender and flavors are well blended.

It came out great! It’s hard to find one that doesn’t have meat in it and I just wanted a light soup. I added potatoes and some Mediterranean spice and used diced tomatoes instead of whole. Even my carnivorous husband liked it, but only as an appetizer. It made a lot more than 6 servings.
LOVE this soup, as I enhanced it: used half of the tomatoes, added a can of cannellini, 3/4 cup (dry/small) pasta, and a parm rind. SO good!
I put a large can of V-8 instead of all the beef broth. Great way to clean out your veggie drawer.
Really enjoyed this soup and have made it on 3 different occasions. It’s easy to add different ingredients as well.
Really good flavor. I added a pack of onion soup mix used low sodium soy sauce and omitted the salt. Also added a potato to the mix and a cup of Ditalini pasta. Wife tells me as she looks at it, “that’s a lot of tomato’s”…really. Never told me she’s not a fan of stewed tomato’s. She wants less tomato’s and green beans and corn added next time. Sigh!!! Yea…good flavor.

Very tasty ~ loved it. Added some macaroni noodles the first time around. Freezes beautifully. Just about to make my second batch today .. adding a can of mixed beans ~ to add some protein this time.
This was my first time having a beef-based vegetable soup so I don’t have a lot of experience but I thought it was pretty good. I added some potatoes and corn to the soup which complimented the dish nicely.
I’ve been making this soup for years and I love it. The first time I made it I mistakenly bought crushed tomatoes instead of whole tomatoes and that’s the way I’ve been doing it ever since. Goes great with a grilled cheese sandwich.
Added additional vegetables: summer squash, small yellow potatoes, corn, broccoli, green beans. Spiced it up with canned fired roasted tomatoes with green chilies. Lessen up on salt. Perfect soup for chilly day.

This is a pretty simple basic recipe – the flavor will largely depend on the broth you use, so definitely adjust to taste! It’s easy to bulk this up with additional veggies, some pasta or potatoes, or even beans!
We liked this soup. It is great for lunch. After sautéing the veggies, I put in the crock pot for 3 hours on high. It made for an easy meal.
This is a great base recipe and I can see how some thought it was too salty but I really enjoyed the flavor the soy sauce and Worcestershire added. The reason I am not giving 5 stars is because this is extremely thin as written. Once I had the soup assembled, I saw that it was going to need something more. I chopped up a potato, threw it in, and that did the trick. Great recipe but I really think you need to add potato, noodles, or rice.
This soup was delicious! I usually don’t like eating leftovers for days and days but this soup was so good that I ate it all week long. Yum!
This turned out to be a surprisingly flavorful and delicious soup. After reading some of the reviews I took a few suggestions by not adding salt and used 2 14.5 oz. cans of diced tomatoes including the juice, added 1 can of black beans and 1 can of corn kernels. In addition I added 1/2 cup of uncooked orzo. The recipe will stay in my collection from now on.
Very satisfying. This is just as the name suggests…. old fashioned but delicious. It reminds me of coming home for lunch from school. Goes perfectly with some crushed saltine crackers. The only change I made was to add some chopped frozen green beans and frozen corn kernels.
I added some corn and green beans that were leftovers. Also my husband thinks he’s deprived if there isn’t meat in soup so I added some small pre-made home style meatballs. Good flavor combo with the soy sauce and Worcestershire. Loved it! Will definitely make again.
So good! I did modify it a bit though. Where’s the garlic??? I added in 2 minced garlic cloves with the butter, onions, celery and carrots. I also added in cabbage and kale with the rest of the ingredients. The amount of soya sauce is spot on if you are using unsalted broth. Yum!
I just made this soup, it was quick and delicious! With items you normally have on hand. Very good on a cold blustery day ! Yum !
I have to say…I detest soy sauce & was skeptical. This is quick, easy and tasty!
