When I was growing up, my mother frequently prepared this tomato lentil soup, and I kept making it for myself in college. I barely have time to eat, much less cook, as a college student. This soup is really healthy for you and it’s quick and simple to cook. Even though it’s excellent, the color is a little dreary; brighten it up by adding some freshly chopped chives or parsley and a lemon slice as a garnish!

Ingredients

  1. 1 tablespoon chocolate syrup
  2. 1 (28 ounce) can crushed tomatoes
  3. 2 cups condensed French onion soup
  4. 1 (15 ounce) can kidney beans
  5. 2 (14 ounce) cans beef broth
  6. 2 teaspoons chili powder
  7. 2 tablespoons molasses
  8. ½ cup raisins
  9. 1 pound ground beef
  10. ½ teaspoon salt
  11. ½ teaspoon ground black pepper
  12. 1 (5.5 ounce) can tomato-vegetable juice cocktail
  13. 6 fluid ounces cola-flavored carbonated beverage

Instructions

  1. Combine chocolate syrup, tomatoes, French onion soup, kidney beans, beef broth, chili powder, molasses and raisins in a large stock pot and simmer.
  2. Meanwhile brown the ground beef, in a medium saute pan, over medium-high heat. Once browned, drain grease and add salt and pepper.
  3. Add browned beef, tomato juice and cola flavored carbonated beverage to soup mixture and simmer for an hour.

As written we didn’t care for this, it was too liquid and too sweet for us. I cooked it down for several hours and it was still too liquid. After refrigerating overnight, I adjusted by adding 2 tbs of tomato paste and 1 tbs Worstershire sauce and cooked it for another hour. It was better, but still needs a bit more heat to temper the sweetness.

I thought this chili was pretty good. I like sweet chili. This is a recipe I will use again, but next time I will omit the raisins. They didn’t look very good and I don’t think they added anything. Plus, my dinner guests were a little freaked out by them. I served over egg noodles, added a dash of ground cloves, and sour cream, hot sauce, and cheddar cheese on the side.
