Ingredients

  1. 2 quarts water
  2. 20 small meatballs
  3. 2 (8 ounce) cans tomato sauce
  4. 2 cubes beef bouillon cube
  5. ½ teaspoon dried oregano
  6. ½ teaspoon dried basil
  7. ¼ teaspoon dried thyme
  8. salt to taste
  9. ground black pepper to taste
  10. 2 stalks celery, sliced
  11. 2 carrots, sliced
  12. 1 clove garlic, minced
  13. 1 cup elbow macaroni

Instructions

  1. Bring water to a boil in a large saucepan. Add meatballs, tomato sauce, bouillon, oregano, basil, thyme, salt and pepper to taste, celery, carrots, and garlic, and simmer for 30 minutes.
  2. Add macaroni and cook until pasta is done. Top with parmesan cheese to serve.

Great soup! I made it as written and I wouldn’t change anything next time. I did not have the beef bouillon cubes so I used beef broth. I will absolutely be keeping this in my rotation.

A very easy recipe with just enough prep and chopping to make me feel like I’m actually “making” soup. I made it as submitted, but it would be very easy to branch out from the basic recipe and add whatever you have on hand. I selected it because I had a bag of frozen party meatballs left in the freezer after the holidays. It used only half a bag so I’ll make this again soon.

I followed the base recipe only subbing beef broth for some of the water because I had no bouillon. I did add a can of creamed corn, extra egg noodles (cause no macaroni in the house) onion & dropped in a 1/2 cup of green onions near the end. It was amazing! Hubby’s first reaction before tasting said skeptic but he went back for 2nds. I let it simmer longer, just because it’s always better that way – at least at my house. Can’t wait to make it again. Next time, maybe extra veggies. Thanks for this amazing but easy recipe.

This was really good. Although I used ground beef, no thyme, 4 bouillon cubes, and 5 quarts of water. I also added a can of green beans, and a can of peas. Turned out beautifully. Will make again.

This was pretty good, but I did a couple of things different to make it better and if I were to make it again there are a couple more things I would adjust. The main things I did different was that I made and pre-cooked my own meatballs (ended up with 27 of them so slightly more than called for) and I used canned crushed tomatoes instead of the tomato sauce. I found that there was far too much liquid versus number of servings and also that I was still a touch bland, so next time I would greatly reduce the water (I’m thinking maybe using only 1/3 of the amount listed) and replace this with a stock with additional herbs for flavour. Will make again as I enjoyed this overall, and hopefully the changes make it 5 star worthy.

I substituted the herbs with Italian seasoning but otherwise followed the recipe. This was delicious and I would absolutely make it again. Even my two picky teenagers liked it. Great recipe.

This was delicious and definitely filling…I didn’t have beef bouillon cubes but I added all ingredients including squash. I topped with provolone cheese. I didn’t have a chance to take a pic but I will make it again.

Very delicious. My kids liked it. I chose to make the soup separate the meatballs (fresh not frozen if you have time). Then I put the meatballs in a soup bowl and poured the soup over the meatballs.

My family loved this soup! I used Acini de Pepe for the pasta and store bought beef broth in place of the water and boullion. Added a loaf of fresh bread and dinner was served. My teenagers went to town on the leftovers for breakfast the next morning. Will definitely make again!

The only thing I did different was used home made meatballs that I had in the freezer, can’t stand any store bought meat balls! It was so nummy and I recommend this recipe.

Five stars! We really loved this! Thank you! Used chicken broth instead of water and crushed tomatoes instead of sauce. Doubled the herbs. The whole house smelled like an Italian restaurant. The pasta continues to absorb the broth which thickens it up.

I enjoyed the soup I ended up with company so I doubled the recipe . I did add my homemade tomato paste,2 cans of stewed tomatoes and I used beef paste, hubby absolutely loved it. I sprinkled fresh parmesan cheese over it

Delicious! The recipe says to boil all everything together, don’t! Sweat the vegetables, add the tomato sauce, water, then a beef base if you don’t have bouillon cubes, boil it, add seasoning, add macaroni, and if you made your own meatballs don’t boil it! Bake it, even if you bought meatballs frozen! I added some chili flakes and it was very exquisite.
