Ingredients
- 6 slices bacon
- 1 pound lean ground beef (80% lean)
- 3 cups reduced-sodium beef broth
- 1 cup shredded Cheddar cheese
- 4 ounces cream cheese
- 2 spears kosher dill pickles, chopped
- 3 tablespoons tomato paste
- 1 tablespoon steak sauce
- 2 teaspoons spicy brown mustard
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon ground black pepper
- 1 head romaine lettuce, chopped into bite-sized pieces
- 6 grape tomatoes, halved
- ¼ cup chopped red onion
Instructions
- Heat a large soup pot over medium-high heat and add bacon. Cook until crisp, about 10 minutes. Transfer to a paper towel-lined plate. Set aside to cool.
- Add beef to the soup pot and flatten with a spatula. Cook until bottom is browned, about 5 minutes. Flip and cook other side, about 5 minutes more. Add broth, Cheddar cheese, cream cheese, pickles, tomato paste, steak sauce, mustard, onion powder, chili powder, and black pepper. Mix well to combine, breaking meat into smaller pieces.
- Reduce heat to low; cook and stir until cream cheese is melted, about 3 minutes. Cover and cook soup for 25 minutes more.
- Ladle soup into individual bowls. Divide lettuce between bowls and fold into soup. Crumble 1 slice of cooked bacon into each bowl and garnish with tomatoes and red onion.

We loved this. I had to wing it a little as I was missing some ingredients. I used 2 tsp Worcestershire since we don’t have steak sauce. I had no tomatoes or lettuce, so I couldn’t add them. But I’m sure they’re great. I added sliced yellow squash after the ground beef was brown just because I needed to get rid of it. It worked out well, even if it didn’t quite match the cheeseburger theme. Topped with bacon, red onion and sour cream at the table. Kids say 5 stars

The whole family loved it. I didn’t have a few ingredients like the mustard, steak sauce or tomato paste so I improvised with the closest things I had. Added chopped garlic, mustard powder and some sea salt. Went lighter on the chili powder. Threw on extra toppings: avocado and 5% greek yogurt dollop. So good!!!

My husband and daughter and I loved this, and we even had seconds. The only thing I would do different is maybe add two pounds of ground beef instead of one. Otherwise, it’s delicious!

I didn’t worry about pushing the meat down into the bottom of the pan, I just browned it and went from there. This was such a good soup!
I added garlic, and left off the bacon and lettuce. It was not a big hit with my kids unfortunately. I liked it, but most likely will not make it again since I would be the only one who ate it.
This was delicious! I made it as directed except for I used iceberg lettuce(I missed romainewhen I was shoppin), my daughter is super picky and she loved it! I will be making again!
This was just ok. It tasted kind of like a cheeseburger but the lettuce and veggies just did not stay crisp at all despite being added right at serving time. I also think the soup was just way too rich and it really needed more than just the meat and the minimal veggies. My 6 year old didn’t like it at all and the rest of my family thought it was ok. I wouldn’t make it again.
