Sublime!
I like mine soupier and double the liquid. That also means double all the seasonings and wine . The more tortellini, the less soupier it is. Everyone loves this recipe. Thank you.
Perfect as written. I modify based on what’s on hand. I use spicy sausage, add fresh bunch of chopped spinach, canned petite diced tomatoes instead of fresh, white wine vs red. If there are only two of you this freezes well and provides several delicious dinners. Just don’t add tortellini until you serve if you are going to freeze. Delicious with any variation!!
This soup is soooo good! I didn’t have the red wine. Didn’t miss it. Will be putting in freezer bags. Did put in spinach, half a small bag of baby carrots & used canned tomatoes instead of fresh.
I followed this recipe exactly, and my girlfriend said it was the best thing I ever made.
Tought it was great! Left out the wine, only because I had none. Used chopped cherry tomatoes; did not peel or seed. Used Italiam moose sausage, so no need to drain fat. YUM!
Absolutely delicious!
Delicious. A wonderful hearty soup for a cold day. My family really enjoyed this.
Easy to make and delicious! Everyone asks me for the recipe.
this receipe is excelle.nt. Don’t change a thing
My family has been making this for a few years now. It has become a family favorite! I love how it still taste amazing no matter what ingredients you reduce or leave out. My kids will not eat carrots, and some don’t like zucchini. Make adjustments and this soup will still taste amazing. Enjoy!
I’ve made this soup several times now and absolutely love it. It is my favorite soup. I also added mushrooms and green beans for added vegetables.
Fantastic
This soup is so, so good. The perfect fall meal. I used half spicy sausage because we like a little spice at our house and two big handfuls of spinach at the end to add another veg. Really fantastic recipe.
I’ve made this multiple times for my family, friends, potlucks, holidays, and mealtrains. Big hit!
This is a great base soup that you can use whatever you have in the house. I used the sausage, onion, garlic, oregano. I used mixed frozen vegetables and frozen spinach with 4 plus quarts of beef stock. I also used soup pasta instead of tortellini. I love to make a big pot of soup so I have leftovers for the freezer since there is only my husband and me. I also freeze the soup in gallon freezer bags, it takes up much less room in my freezer and defrosts much quicker. Thanks for the recipe
Family favorite soup! We double the recipe, everyone want seconds!
Hands down best soup EVER!! I also tried it with smoked chicken from my local meat market and it was phenomenal! Highly recommend!
This soup was very good. I used Beyond Sausage and mushrooms instead of zucchini. I also used a can of tomatoes instead of fresh and added a little spinach because I had it on hand. Family enjoyed the soup. Thank you for the recipe!
I enjoyed this soup so much. Delish!
Been making this a long time and I have done many revisions over the years. I just came on to let you know my latest one that worked out really well. Also cooking it in a dutch oven is really key here. Used Better than Bouillion (Beef) instead of the Beef Broth. Used Tomato Paste (1 tablespoon) instead of the Tomato Sauce. The sweet sausage came out great with this. I have also used spicy in the past which added a nice kick. The cheese at the end I prefer either Monterey jack or muenster cheese instead of the parm. I just grate 1/2 a block and add it on once the soup is in the bowl. If you don’t have the wine it’s okay. The wine adds more depth of flavor to the soup but I didn’t have any this last batch and it still tasted great. I prefer it with wine but it’s not a deal-breaker if you don’t have it. Enjoy! This is a great soup on a cold day.
