Ingredients
- 1 pound Italian sausage
- 1 clove garlic, minced
- 2 (14 ounce) cans beef broth
- 1 (14.5 ounce) can Italian-style stewed tomatoes
- 1 cup sliced carrots
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 (14.5 ounce) can great Northern beans, undrained
- 2 small zucchini, cubed
- 2 cups spinach – packed, rinsed and torn
Instructions
- Heat a stockpot or Dutch oven over medium-high heat. Add sausage and garlic; cook and stir until browned, 5 to 7 minutes. Stir in broth, tomatoes, and carrots; season with salt and pepper. Reduce heat to medium-low, cover, and simmer 15 minutes.
- Stir in beans with liquid and zucchini; cover and simmer another 15 minutes, or until zucchini is tender.
- Remove soup from heat and add spinach; replace the lid and allow spinach to wilt. Stir until warmed through.

LOVE IT! Substituted potato for zucchini and corn for spinach. The base of this soup is very forgiving on ingredients.
Very good! I used hot sausage, which was a bit too spicy for our taste so next time I’ll make it with half mild/half hot. After cooking the sausage I recommend draining the grease and blotting the sausage with paper towels before adding the other ingredients. This is a very hearty soup that tastes even better the next day.
It was awesome. I added summer squash, ricotta, aged parmigiana, and mozzarella. I also added penne pasta made from chickpeas. I gave some to my sister, she said best soup she’s ever eaten.
Very good, didn’t have two cans of beef broth. Used 2 cans of fire roasted diced tomatoes instead of just 1 to replace the missing beef broth.

A great tasting, easy to prepare soup – the only ingredient I didn’t have in my pantry or fridge was the zucchini! It comes together quickly and tastes like you spent all day preparing it!!
This is a very flexible recipe. I’ve made it exactly as the recipe states and it is great. Sometimes I use 1/2 Italian sausage and half hot sausage. Sometimes I replace the spinach with Swiss chard. Sometimes I use my own canned tomatoes and add Italian seasoning. I’ve never had a bad batch!
So easy to make. Didn’t have beef broth so I used vegetable broth and it was still really good. Will make this again.
This recipe is EXCELLENT! I’ve been making it for several years and it always turns out great. I’ve used mild or spicy sausage, canned and cooked dried beans, modified the spices, and it’s always so good! I also appreciate that as a single person, it makes a moderate amount. I can eat it for a few days, freeze some, give some to my other single friends, and it’s gone. One of my GO-TO recipes when I’m in the mood for soup. You won’t be disappointed!!
My first attempt I followed the recipe as written. I was trying to mimic the delicious Lasagna soup from our local gourmet market. After reading the ingredients on their package I substituted 1 1/2 lbs hot Italian sausage for the ground beef. I added 1/2 cup half and half and 3/4 cup finely grated parmesan during the last 20 min of simmering. The result was almost exactly as delicious as the gourmet soup I bought. PS: I don’t have an insta pot so after browning the sausage, I simmered on very very low for 45 min-1 hour
I’ve made this recipe dozens of times. I have followed it exactly as written, and it is excellent as is. Now I typically use hot Italian turkey sausage and cook it in my instant pot, which gives it a wonderful, long-simmered tenderness, and deepness of flavor. It’s a winner every time and the leftovers are wonderful! Add some spice with fresh jalapeño and some crushed red pepper.
Really good, easy to make, great as stated in the recipe, but easy to adapt for individual preferences or just to change it up. Very glad I found this recipe!
Fantastic recipe! And super quick and easy. Definitely going in my recipe book, with a few minor adjustments. I used the hot Italian sausages from Trader Joe’s to add a little kick, added a little oregano, doubled the garlic, and doubled the beans to make it a bit thicker. As others have said, you can do a bunch of things with this recipe to make it your own; I already can’t wait to try different variations!
Everyone in my family loves this soup. I’ve shared the recipe numerous times. I add a diced fennel bulb along with the carrots, it gives the soup a great taste.
Read the earlier reviews below – added a whole onion – chopped and sauteed first. Also increased garlic to 3 cloves. Used cajun style andouille sausage, which added a nice kick. My husband and I both LOVED this soup !
I added an onion, triple the garlic, plus extra broth. This is very succulent.
Flavorful and easy! I left out the zucchini, added herbs (parsley, basil, oregano), added a handful of pasta, served with shredded parm. Fabulous soup!

I’ve made this recipe for YEARS! Usually Christmas evening I usually have two soups to choose from with an array of finger foods…..THIS IS A FAVORITE! Its perfect amount of sausage ratio to the other veges! Its yummy! Even took left overs to work to share and it is LOVED!
Everybody loves this. I used better than bouillon beef base and added sliced mushrooms for a richer taste. Delicious!!
