Ingredients
- 1 pound tomatillos, husked and chopped
- 1 large poblano pepper, seeded and chopped
- 1 large jalapeno pepper, seeded and chopped
- 1 small bunch fresh cilantro, stems removed
- 1 lime, juiced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 pounds skinless, boneless chicken breast, cubed
- 1 small onion, chopped
- 2 teaspoons Mexican oregano
- 1 teaspoon ground cumin
- 3 (15.5 ounce) cans white hominy, drained
- 3 cups chicken broth
Instructions
- Combine tomatillos, poblano pepper, jalapeno pepper, cilantro, lime juice, and garlic in a blender; blend until smooth. Set salsa verde aside.
- Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Add olive oil, chicken, onion, oregano, and cumin; cook for 5 minutes. Add salsa verde, hominy, and chicken broth. Stir to combine.
- Close and lock the lid. Select Manual function according to manufacturer’s instructions; set timer for 20 minutes. Allow 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Ladle posole into bowls.
- Feel free to substitute pork for the chicken.

I added 1 tsp chili powder,3 more poblano and doubled the broth. Man was this great. about 20-30 mins prep and 20 mins to cook and no mess instapot!!
Amazing posole! I didn’t change a thing so I could see how the recipe was intended. I don’t believe I would change anything.
Recipe was super easy to follow and very budget friendly! I did make a couple of alterations to the recipe, I roasted the tomatillos, poblano, and jalapeno in my air fryer, peeled the skins off the poblano and jalapeno before blending with the rest of the salsa verde ingredients, and as I like my foods to have a little bit of spice, I left the seeds in the jalapeno. I also used chicken thighs instead of breast, I can throw them in the IP whole and after 20 minutes they shred very easy right within the soup. Will definitly make this again when the weather is chilly or just because it’s delicious and what I’m wanting
Broth was GREAT. And that’s about where it ends. Needed more chicken, more everything, but the flavor was great once salted / seasoned with some Cajun seasoning. Definitely a great base “soup”. Thank you!

Wow! This was absolutely fantastic and I did not change a thing! I had sliced radishes and avocado for toppings. My peppers were hot and they added just the heat needed to make this so good! Because I am only cooking for one person these days I did cut the recipe in half just so I wouldn’t have to eat it for a week. I love my Instant Pot and any time I find a recipe such as this I love it even more!
This was really good, but too much lime flavor, which is the reason for 4 instead of 5 stars. I will make it again with much less lime…Easy to add back in, but you can’t take it away.
This broth was unbelievably good! I did not care for the hominy, so I might use rice next time. This is definitely a keeper!

I just made this dish. Was very good. Needs a little more heat so i will double the jalapeño peppers and needs salt. Otherwise absolutely yummy and so easy!!

Great recipe. I like a lot of flavor so I seasoned my chicken with adobo seasoning and I added some salt and pepper to the broth.
This was SO good! I have another Posole recipe that I have made many times but I like this one better. I love that it has fresh salsa that goes in it. I top mine with avocado, radishes, shredded cabbage and little cheese. SO GOOD!!
This was really good. I do recommend actually chopping the tomatillos prior to putting them in the blender–it will work better that way! I used chicken thighs instead of breasts because I didn’t want the meat to be to dry. It had great flavor but not too spicy.
