Instant Pot® Bourbon Beef Stew

In less than an hour, you can make a simple puff pastry apple strudel recipe. When paired with some vanilla ice cream, it tastes exceptionally good right out of the oven.

Ingredients

  1. 1 tablespoon olive oil, or to taste
  2. 1 large onion, coarsely chopped
  3. 1 large clove garlic, crushed
  4. 1 ½ pounds cubed beef stew meat
  5. ½ cup bourbon
  6. 2 potatoes, chopped
  7. 1 (15 ounce) can black beans, drained
  8. 1 (14 ounce) can whole-kernel corn
  9. 1 (8 ounce) package fresh mushrooms, sliced
  10. 2 carrots, chopped
  11. 2 teaspoons salt
  12. 2 teaspoons chili powder
  13. 1 ¼ teaspoons ground black pepper
  14. 1 teaspoon ground cumin
  15. ½ teaspoon ground cinnamon

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil, onion, and garlic; cook and stir until starting to soften, 3 to 5 minutes. Add beef; cook and stir until browned on all sides, about 5 minutes. Pour in bourbon and scrape up any browned bits off the bottom of the pot.
  2. Cancel Saute function. Add potatoes, black beans, corn, mushrooms, and carrots to the pot. Sprinkle salt, chili powder, pepper, cumin, and cinnamon over the beef and vegetables. Stir. Close and lock the lid. Select Stew function; set timer for 45 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure using the natural-release method according to manufacturer’s instructions, 15 to 20 minutes. Make sure all the pressure has released and the valve has dropped before you open the lid.

This is just SO good. I dropped a few items as I try to not have so many carbs, but the recipe is really good. I omitted corn, and added sweet potatoes. Really good, gets better as a ‘leftover’ meal.

I used a crockpot to make it as I don’t have an instant pot so I had to brown the onions, garlic and meat first. Then made it according to direction with no substitutions.. It was delicious. The boubon and cinnamon made the stew very rich tasting. Will definitely make it again .

The stew was enjoyable and tasty. I had to modify a bit. Sorry. I didn’t have a “stew” button on my pressure cooker so I started out cooking it high pressure for 10 minutes and then I put it on low pressure for 30. I didn’t know if it was going to work but it did so make note if you do not have a stew button. I also expected to put beef stock into it and it wasn’t listed on the ingredients. I poured about 2 cups. The meat was tender and the stew had a flavor of bourbon, but not over strong. It’s what gave it a unique taste. Oh, I also poured corn starch onto my meat before cooking. Browned it well and gave a bit of starch as a thickener. I will make again for sure.
