Great technique to get youngsters to eat their vegetables and a fantastic substitute for mashed potatoes!!

Ingredients
- 1 pound ground beef
- 1 bunch cilantro, finely chopped
- 1 small onion, chopped
- 4 cloves garlic, minced
- 1 pinch garlic salt
- 1 pinch onion powder
- salt and ground black pepper to taste
- cooking spray
- 4 (14.5 ounce) cans chicken broth
- 4 large carrots, cut into 1/2 inch pieces
- 3 stalks celery, cut into 1 inch pieces
- 3 potatoes, cubed
Instructions
- Place ground beef, 1/2 of the cilantro, 1/2 of the onion, garlic, garlic salt, and onion powder in a bowl. Sprinkle with salt and black pepper; mix gently until combined. Form meat mixture into golf ball-sized meatballs.
- Coat a large skillet with nonstick cooking spray; warm over medium-high heat. Cook meatballs in the hot skillet until browned all over. Transfer meatballs to a plate and set aside. (Meatballs do not need to be fully cooked since they will finish cooking in the soup.)
- Cook and stir remaining onion in the same skillet over medium-low heat until translucent, 8 to 10 minutes. Transfer onions to a large pot.
- Pour chicken broth into the pot with onions. Stir in carrots, celery, and potatoes. Bring to a boil over high heat; reduce heat and simmer until potatoes are nearly tender, about 15 minutes.
- Add meatballs and remaining cilantro; simmer for 30 minutes. Season with salt and black pepper.

As written, this soup is good. However, it could benefit in flavor from a few added spices like oregano, cumin, etc. I’ve never had authentic Albondigas soup, so maybe this version is that…it’s just kind of bland for my taste. I did add a bit of panko to the meatballs as a binder, as the recipe didn’t call for anything. I think my husband will enjoy this soup though.

I made it pretty much as stated. My only change was to add 1/2 cup cooked white rice to the meat mixture.

Very simple to follow recipe. Meatballs were very flavorful, but the broth was kind of bland. Easily adjusted for next time, since I’ll definitely make it again!
Very tasty recipe. I did add my Mexican rice while it simmered the last ten minutes and it was amazing! I will make again.

I used chorizo in place of hamburger. It was outstanding and will definitely make it again.
The best!! I added 1 egg and 1/2 cup of bread crumbs to the meatballs. They held together perfect. I also added zucchini and some hatch chilies to the soup. Then I put 1/2 cup of rice on the bottom of our bowls, ladeled the soup over it, and topped it with crushed tortilla, jack cheese, avocado and cilantro! Will make this soup often! So unique and delicious. Followed recipe to a T, except used ground turkey. Kiddo ate 8 albondingas and she is a picky eater. Made a 2nd pot the same day! It’s a keeper!

This recipe is delicious! We added one egg to the beef to hold it together better. We also added some cumin for spice. It’s easy and so tasty!!

I made more broth because I was craving it, but next time I would add more veggies and possibly some type of rice.
I added rice to my meat balls along with cilantro, and onions and seasoning and I added carrots, squash, celery and potatoes
Followed recipe. Not a fan of vegetables, so i used half the vegetables. Came out good
