Hearty Ground Beef Chili

I chose to create this recipe utilizing my favorite ingredients after looking through several different recipes. The end result is a tasty and filling ground beef chili. When paired with handmade cornbread, it’s fantastic.

Ingredients

  1. 1 tablespoon olive oil
  2. 1 ½ pounds ground beef
  3. 1 small onion, chopped
  4. 1 stalk celery, chopped
  5. ½ green bell pepper, chopped
  6. 1 (28 ounce) can diced tomatoes
  7. 1 (15.5 ounce) can light red beans, drained
  8. 1 (15.5 ounce) can dark red beans, drained
  9. 1 (15.5 ounce) can black beans, drained
  10. 1 (14.5 ounce) can diced tomatoes with green chile peppers
  11. 3 tablespoons chili powder, or to taste
  12. 2 teaspoons white vinegar
  13. sea salt and ground black pepper to taste
  14. shredded Cheddar cheese, or to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Cook and stir ground beef in the hot pot until browned and crumbly, about 10 minutes. Add onion, celery, and green bell pepper. Cook until onion is translucent, about 5 minutes.
  2. Stir diced tomatoes, light red beans, dark red beans, black beans, diced tomatoes with chile peppers, and chili powder into the meat mixture. Bring to a boil. Reduce heat to low and let simmer until chili has started to thicken, about 1 hour. Season with vinegar, salt, and pepper. Garnish with Cheddar cheese.

This was a delicious and easy basic beef chili recipe – great kick and consistency! I added a little more vegetables, and some cumin to mine (because I love the flavor of cumin in chili)! It made the house smell wonderful while it was simmering too – bonus!
