Healthier Delicious Ham and Potato Soup

Sea scallops go well with grilled shiitake mushrooms because they are both soft and crunchy on the outside. They work well with roasted broccoli, but roasted potatoes are also a wonderful option.

Ingredients

  1. 3 ½ cups peeled and diced potatoes
  2. ½ cup chopped carrots
  3. ½ cup chopped green beans
  4. ⅓ cup diced celery
  5. ⅓ cup finely chopped onion
  6. ¾ cup diced cooked ham
  7. 3 ¼ cups water
  8. 2 tablespoons chicken bouillon granules
  9. 1 teaspoon ground white pepper, or to taste
  10. 5 tablespoons butter
  11. 5 tablespoons all-purpose flour
  12. 2 cups nonfat milk

Instructions

  1. Combine potatoes, carrots, green beans, celery, onion, ham, and water in a stockpot. Bring to a boil and cook over medium heat until potatoes are tender, 10 to 15 minutes. Stir in chicken bouillon and pepper.
  2. Melt butter in a separate saucepan over medium-low heat. Whisk in flour with a fork and cook, stirring constantly, until thick, about 1 minute. Slowly stir in milk so lumps do not form until all of the milk has been added. Continue stirring until thick, 4 to 5 minutes.
  3. Pour milk mixture into the stockpot and cook soup until heated through, about 5 minutes. Serve immediately.

Sooo good. Leftover frozen spiral ham from Christmas, all the other ingredients plus a can of creamed corn, it is so tasty!

I used this for a base as I changed a few things. First I halved the recipe, I didn’t need this much. Had no green bean. I did make a base with chicken broth and cauliflower, then purified it. Then did the potatoes, carrots, onion, ham and celery as directed. Once that was hot, I added the cauliflower mix. Continued to heat as directed, did the butter, flour and skim milk and added to the bigger pot. I have to admit I added some cheddar cheese, so I probably took away some of the healthiness. But this was very good. I only gave it a 4 because I didn’t follow exactly.

This was very popular with my family. I did not have any ham, so for bulk I added mushrooms, sauteeing them first, then adding the rest of the ingredients. I used 1/2 full fat milk and half 1% milk, reducing the calories somewhat, but also adding some richness. I used Better Than Boullion and doubled the recipe and ended up with a ton of soup, which was great. This is an excellent potato soup recipe, the definitive one for clean eating. Loved it.

Very good. So much better than my old recipe. I used a cup of frozen mixed vegetables to replace carrots and green beans, so I had peas and corn in the soup but it was colorful. Nice.

It was delicious. Only problem is that it took way longer to cook because I had to keep whisking in more flour and then corn starch, as others did, to thicken the sauce. I will make adjustments in the beginning to speed it up.
