Sea scallops go well with grilled shiitake mushrooms because they are both soft and crunchy on the outside. They work well with roasted broccoli, but roasted potatoes are also a wonderful option.

Ingredients
- 3 ½ cups peeled and diced potatoes
- ½ cup chopped carrots
- ½ cup chopped green beans
- ⅓ cup diced celery
- ⅓ cup finely chopped onion
- ¾ cup diced cooked ham
- 3 ¼ cups water
- 2 tablespoons chicken bouillon granules
- 1 teaspoon ground white pepper, or to taste
- 5 tablespoons butter
- 5 tablespoons all-purpose flour
- 2 cups nonfat milk
Instructions
- Combine potatoes, carrots, green beans, celery, onion, ham, and water in a stockpot. Bring to a boil and cook over medium heat until potatoes are tender, 10 to 15 minutes. Stir in chicken bouillon and pepper.
- Melt butter in a separate saucepan over medium-low heat. Whisk in flour with a fork and cook, stirring constantly, until thick, about 1 minute. Slowly stir in milk so lumps do not form until all of the milk has been added. Continue stirring until thick, 4 to 5 minutes.
- Pour milk mixture into the stockpot and cook soup until heated through, about 5 minutes. Serve immediately.

My wife and I made this recipe today. It was quick and easy to make and did not disappoint! Very delicious.
Sooo good. Leftover frozen spiral ham from Christmas, all the other ingredients plus a can of creamed corn, it is so tasty!
I used this for a base as I changed a few things. First I halved the recipe, I didn’t need this much. Had no green bean. I did make a base with chicken broth and cauliflower, then purified it. Then did the potatoes, carrots, onion, ham and celery as directed. Once that was hot, I added the cauliflower mix. Continued to heat as directed, did the butter, flour and skim milk and added to the bigger pot. I have to admit I added some cheddar cheese, so I probably took away some of the healthiness. But this was very good. I only gave it a 4 because I didn’t follow exactly.
Great as is.
This was very popular with my family. I did not have any ham, so for bulk I added mushrooms, sauteeing them first, then adding the rest of the ingredients. I used 1/2 full fat milk and half 1% milk, reducing the calories somewhat, but also adding some richness. I used Better Than Boullion and doubled the recipe and ended up with a ton of soup, which was great. This is an excellent potato soup recipe, the definitive one for clean eating. Loved it.
Very good. So much better than my old recipe. I used a cup of frozen mixed vegetables to replace carrots and green beans, so I had peas and corn in the soup but it was colorful. Nice.
Very easy to make. Amazing recipe. Will definitely make this again. My family really loved this.
Followed the recipe but made it non dairy by using vegan butter and coconut milk. Delicious!
It was delicious. Only problem is that it took way longer to cook because I had to keep whisking in more flour and then corn starch, as others did, to thicken the sauce. I will make adjustments in the beginning to speed it up.
delicious I doubled it but did not use all the flour and butter. I used about 4 table spoons each for a double batch it came out great.
AWESOME!!! No we didn’t make any changes but we would definetly make it again.
Very delicious and easy to make. The only change we made to the recipe is we added way more ham. This is definitely going on the list of cold weather dinners.
The soup was flavorful and creamy! I made a vegetarian version not adding ham and the soup still had a good flavor.
I made some changes. I did not have skim milk so I used fat free evaporated milk. I added a leek. It turned out fine.
Grandkids loved it…so did Grandpa and I =)
Great soup and quick to make! I used chicken broth instead of water and added corn, carrots and ground turkey instead of ham. My family loved it! Thank you!
Followed the recipe exactly and it was wonderful!
it was ok, not my favorite ham and potato soup. a little too watery for me. I like how there are a variety of veggies in this one though. thanks
Easy to make and delicious! I’ll probably add corn next time.
Made as shown, except added a lot more ham and it was great as main course. Will make again.
Came out amazing. Added extra vegetables and cheese. So good!
