Ingredients

  1. 1 pound ground beef
  2. 4 cups chicken broth
  3. 4 cups water
  4. 2 (1 ounce) packages dry onion soup mix
  5. 1 (15 ounce) can tomato sauce
  6. 2 stalks celery, chopped
  7. 1 onion, chopped
  8. 1 (16 ounce) package frozen mixed vegetables
  9. ¾ cup elbow macaroni

Instructions

  1. In a saute pan, brown ground beef, over medium heat.
  2. In a large stock pot, combine broth, water, onion soup mix, tomato sauce, celery, onion, frozen vegetables and macaroni. Bring to a boil and then simmer until macaroni is done.
  3. Add browned ground beef, mix and serve.

I added some extra green beans and corn and carrots chopped up as well as used beef consomme soup for flavor. I did not use 4 cups water, just 2 cups because of that. I had some leftover cooked rice I added after I turned the heat down. That added nice depth and flavor as well. Delicious!

There is some confusion about the amount of dry onion soup to use, 1 envelope or 2. I used 1 and it was fine. I thought it was just ok, but my family liked it a lot.

I used ground turkey instead of beef, but you need to add a couple of beef bouillon cubes just to give it a more robust flavour. Was perfect!??

I, too, shied away from using all the onion soup mix. I doubled the recipe, but didn’t change the amount of soup mix – and I’m glad I did. To avoid soggy noodles, I cooked the macaroni separately and served the soup over it. A simple and tasty soup – I will definitely be making it again.

I did make a few changes. To me it would have tasted too plain with no extra seasonings and 4 cups of water. I didn’t have ground beef so I used chicken instead but this was the perfect base recipe I was looking for. I wanted the flavor of hamburger soup with chicken instead. I used one onion packet and half a beefy onion packet mixed w 2 cups water. I added potatoes right away and added frozen veggies later. I made some changes to taste, I added: a can of diced tomatoes, left out the water and the onion, then I added paprika, lemon pepper, a splash of lemon juice, pepper, red pepper flakes, garlic and celery salt. it came out perfectly. I kmow everyone has their own preferences and this is the perfect recipe to taste every now and then and add more seasoning based on what you like. I personally think the diced tomatoes and lemon juice really set it off!
