Ingredients
- ½ pound bacon
- 1 pound ground round
- 1 pound ground pork
- 1 green bell pepper, diced
- 1 yellow onion, diced
- 6 jalapeno peppers, seeded and chopped
- 6 habanero peppers, seeded and chopped
- 8 Anaheim peppers, seeded and diced
- 2 cloves garlic, minced
- 1 ½ tablespoons ground cumin
- 1 tablespoon crushed red pepper flakes
- 3 tablespoons chili powder
- 2 tablespoons beef bouillon granules
- 1 (28 ounce) can crushed tomatoes
- 2 (16 ounce) cans whole peeled tomatoes, drained
- 2 (16 ounce) cans chili beans, drained
- 1 (12 fluid ounce) can beer
- 3 ounces tomato paste
- 1 ounce chile paste
- 2 cups water
Instructions
- Place bacon in a large soup pot. Cook over medium high heat until evenly brown. Drain excess grease, leaving enough to coat bottom of pot Remove bacon, drain on paper towels and chop.
- Brown beef and pork in pot over medium high heat. When meat is browned, stir in the bell pepper, onion, jalapeno peppers, habanero peppers, Anaheim peppers, garlic, cumin, red pepper flakes, chili powder, bouillon, crushed tomatoes, whole tomatoes, beer, tomato paste, chile paste and water.
- Reduce heat to low and simmer for 45 to 60 minutes, stirring occasionally. Add beans and bacon and continue simmering for another 30 minutes.

We’ll I made this exactly as the recipe says. Gotta say I love the taste. It has a nice peppery burn, but I wouldn’t call it hellfire. I think like others my store does not have actual habenero, but bonnet peppers. I will make this again and add a hotter pepper. Still very delicious overall
It was expensive and took a long time to prep; and it was the best chili I ever had. Learned quite a few things along the way, such as how to prep all the peppers. Was proud of myself for cooking this and best thing I’ve ever made.
This was delicious. I decided before making it that I would reduce the fresh peppers by a third, and I like hot food. Also I left out the water and added more beer instead. The chile paste was a new idea for me, I doubled that. Served it in huge bowls with buttered toast. Yummy! Thankyou, this is my new chili recipe.

This is a great recipe. It’s become the only one I use now. The only thing I did different was I sauteed the fresh peppers prior to adding them to the chili. People have asked me to make this time and time again

This is my go-to chili recipe. I made a few changes here and there, but even going with the original ingredients, this is the best chili recipe you are going to find. I have yet to try it using a slow cooker, so I don’t know if that might make it even better.
I’ve made this several times. I do all the cooking of the meats and peppers in a pot, then finish in a crockpot. I’ve entered it into my church’s chili cook off 3 times and won twice. The only year I lost was to a white chicken chili, which I still to this day contend is not chili #riggedelection

I was a bit disappointed. the flavor is good, but it wasnt nearly as spicy as I was hoping. I mean, with a name like Hellfire and reading the comments with people saying they would’ve added less peppers, I was expecting a lot more heat. But the flavor is good regardless

Absolutely my go to chili recipe. It’s nearly impossible to find Anaheim here so I decided to grow them specifically for this recipe. Prior to that I would only use 3 habaneros and 5 jalapeños. I was scared to use the full amount as it may be too hot. This year now that I grew all the peppers myself I used the full quantity. It was not overly hot. The great thing about Habaneros is that the cooking process removes a lot of the heat while still maintaining that amazing flavor of a habanero. Even after using 18 peppers it was still delicious with only a small kick off heat. My neighbor who is sensitive to heat loves this chili. The only thing I change up every once in awhile is the beer. When I can find a beer that is both coffee and chocolate flavor I use that. It can add a tiny bit of sweetness but just a hint. Other than that I change nothing. Don’t be intimidated by the amount of peppers, it’s not crazy hot but just enough. Thanks again for this great recipe.
I love this recipe…had to cut down a little on the Habanero or my wife cant eat it but YUMMY!!!!
I have never made chili with habenero peppers before, so this chili is hotter than the chili I’ve made before. I made it according to the directions. My grocery store doesn’t carry chili paste, so I used some taco sauce instead.
loved the recipe it was absolutely amazing loved the heat loved the flavour, I wasn’t able to find any chilli though I just used red kidney beans and i couldn’t use beer because it was a school project but still amazing recipe

I would say that this is a good solid chili recipe, but labeling it “hellfire” is a bit of an overstatement. I doubled the habenero and it wasnt even that spicy. The flavors were good and I would make it again, but add more chilies.

I didn’t have chili paste so I substituted it with ketchup and cayenne pepper it still came out has hot and delicious one of the best chilis I’ve had in a while very flavorful and spicy
