After experimenting with many white chili recipes, I came up with one of my own that was creamy, hot-spicy yet sweet, and packed with ground chicken, beans, peppers, and savory herbs. My partner frequently brings samples of my food to the office for coworkers to try, and they have all remarked that it is not just delicious chili with a kick, but also one of the greatest non-traditional chilis they have ever had! Thick and substantial, excellent for dinner on a chilly night. Increase the oomph with tortilla chips or corn muffins as a side, the muffins with kernel corn and diced chilies.

Ingredients

  1. 2 pounds ground chicken
  2. 1 cup water
  3. 1 medium onion, diced
  4. 1 medium green bell pepper, diced
  5. 6 small beef bouillon, crumbled, or more to taste
  6. 4 cloves garlic, minced
  7. 1 tablespoon chili powder
  8. 2 teaspoons salt
  9. 2 teaspoons dried basil
  10. 2 teaspoons dried oregano
  11. 1 ½ teaspoons ground thyme
  12. 1 ½ teaspoons ground black pepper
  13. ¼ teaspoon cayenne pepper
  14. 1 (15 ounce) can pinto beans, drained
  15. 1 (15 ounce) can great northern beans, drained
  16. 1 (15 ounce) can sweet corn, drained
  17. ½ cup white sugar
  18. 1 (8 ounce) tub whipped cream cheese
  19. 1 (8 ounce) container sour cream
  20. 1 (12 fluid ounce) can or bottle beer

Instructions

  1. Combine chicken and water in a large Dutch oven over medium-high heat. Cook and stir, breaking up the chicken finely, about 5 minutes. Add onion, bell pepper, jalapenos, and garlic; continue to cook until vegetables are soft and liquid is nearly cooked off, about 5 minutes.
  2. Stir in chili powder, salt, basil, oregano, thyme, black pepper, and cayenne pepper; reduce heat to medium. Taste and adjust seasonings. Stir in pinto beans, great northern beans, corn, and sugar. Add cream cheese and sour cream; cook and stir until thoroughly blended. Stir in beer.
  3. Reduce heat to low, cover, and simmer, stirring occasionally, for 45 to 60 minutes.
  4. You can leave seeds in the jalapenos as you dice to increase heat. To simplify the jalapeno peppers, use a container of widely available pre-chopped jalapeno peppers found in prepared produce.
  5. You can use navy beans in place of great northern beans.

When I first made this, I didnt enjoy the mix of flavors. I only used 2 T sugar, and it was very sweet. The cream cheese and thyme were a bit odd for me with the beer flavor. However, after sitting a day in the fridge, the leftovers were much better. The flavors all melded together better. I think it’s too much meat, but it’s an interesting recipe. Thanks.
