Ingredients
- 1 pound ground beef
- 1 (46 ounce) can tomato juice
- 2 potatoes, peeled and diced
- 2 carrots, chopped
- 1 onion, chopped
- 1 (14.5 ounce) can green beans, undrained
- 1 (14 ounce) can whole kernel corn, undrained
- 1 pinch ground ginger, or more to taste
- salt and ground black pepper to taste
Instructions

- Cook and stir ground beef in a hot saucepan over medium heat until browned and crumbly, 5 to 7 minutes.

- Drain off grease and pour in tomato juice.

- Add potatoes, carrots, and onion, then pour in undrained green beans and corn. Season with ginger, salt, and pepper. Reduce the heat to low and simmer for 1 hour.

This has been in my family for years – “grandpa’s hamburger soup”! I use frozen veggies for fresher taste, and toss in whatever I have on hand. Using V8 juice pumps up flavor and veggie nutrients, too.
O-M-G this brought me back to my childhood!! My Grandmom, Mom and Aunts all made theirs with tomato juice too!! For my preference I just added more canned vegetables and omitted the ginger. Thank you for taking me down memory lane….this is definitely a keeper!!!
So good! This is exactly like my grandma made it. I made no changes except that I didn’t have any potatoes on hand. It warms up really well, I have been taking it for lunch this week and it’s just as good as the first day.
This is fine for a beginner but fresh veggies makes it so much better. If you can’t use fresh at least use frozen, they taste much better than canned.
Very nice – Per my momma – vegie soup isn’t vegie soup without cabbage and she was correct. Just takes it to the next level and I prefer stew meat to hamburger. Thank you for sharing!
This looked like a good old-fashioned soup. I had most of the ingredients. I felt the ginger was an unusual addition but it really added to the flavor. Delicious. Will make it again. Be sure to chop up the potatoes and carrot small. I make this in a slow cooker.
Basically very good. I added 1/2 c red wine and a 1/2 tsp red pepper flakes. They added a litt!e kick and a richness.
I loved it the only thing I did different was add 4 beef boulion cubes
Excellent soup. Made a double batch. 2 lbs turkey, 4 carrots, 4 celery stalks, 2 onions, 2 zucchini, 1 large Russett potato. Two cans diced tomatoes, 2 green beans, 1 cannellini bean, 1 large jar mushrooms, 1 lima bean, 1 corn, frozen okra, 92 oz V8, 16 oz Beef broth, 16 oz Veg broth. Seasoned with 1-2 tsp each of marjoram, garlic powder, basil. Cayenne, salt and pepper to taste. Pinch of Ginger. Two tsp each worcestershire and soy sauce.
I made similar adjustments that were noted in other comments: used V8 instead of tomato juice, celery, no green beans, barley instead of potatoes. Needed some spice so added two cloves of garlic, Italian seasoning and dash of cayenne pepper. With the changes it’s now one of our favorites.
I didn’t have any tomato juice so I used a large can of tomato sauce , 1/2 a box of beef stock, and about a tablespoon of garlic from the jar.
i love recipe. my husbands grandmother use to make it all the time. i did however use half the ground beef and for the other half we used venison which gave it more flavor then my husband ends it with come evaporated milk to give it a creamy flavor

This is a super quick and simple soup! I make it with the Spicy V8 & added drained kidney beans (or any bean would probably work) and we call it “Hobo Stew”. Try a nice crusty buttery bread, garlic bread or corn bread with it and you have a lovely, easy meal that very satisfying!

Great recipe. I did add extra seasoning, a little vinegar and some Worcestershire for added flavor. Overall, great recipe!
Very Easy Recipe added some noodles for my liking and it came out delicious! The only thing the carrots & potatoes took forever to cook next time I would cook those first before adding all the other stuff but overall very good
