I adore this soup dish that my sister made. I’ll cook a big pot and eat it for the entire week! It is delicious and may be made as spicy as you wish. After the flavors have had time to meld, food tastes even better the following day.

Ingredients

  1. 1 (16 ounce) package potato gnocchi
  2. 1 tablespoon olive oil
  3. ½ small onion, chopped
  4. 2 cloves garlic, chopped
  5. 1 green bell pepper, chopped
  6. 1 red bell pepper, chopped
  7. 2 Cubanelle peppers, chopped
  8. 1 (32 fluid ounce) container vegetable broth
  9. 1 (28 ounce) can diced tomatoes
  10. 6 leaves fresh basil, chopped, or to taste
  11. 1 teaspoon red pepper flakes, or to taste
  12. salt and ground black pepper to taste
  13. 2 tablespoons grated Parmesan cheese, or to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain.
  2. Heat oil in a large pot over medium heat. Add onion and garlic; cook and stir until browned, about 5 minutes. Stir in green bell pepper, red bell pepper, and Cubanelle peppers; cook for 2 minutes. Pour in vegetable broth and tomatoes. Bring soup to a boil; simmer until peppers are tender, about 5 minutes.
  3. Stir basil and red pepper flakes into the soup; season with salt and pepper. Add gnocchi and simmer until heated through, 3 to 5 minutes. Ladle soup into bowls and sprinkle Parmesan cheese on top.
  4. Substitute chicken broth for the vegetable broth if desired.

This was DELICIOUS! I did follow the directions except, before I got started, I cubed up some chicken tenderloin strips, sauteed them in about 2T of evoo. Once it was about halfway cooked, that is when I started adding onion, garlic and then the peppers. Then I followed it from the recipe. My husband loves this soup! My sons love this soup! I will be making it again.
