Easy Egg Drop Soup

On a gloomy day, this dish for egg drop soup is incredibly calming.

Ingredients

  1. 1 (49.5 fluid ounce) can chicken broth
  2. 1 bunch green onions, chopped
  3. ⅓ cup cold water
  4. 3 tablespoons cornstarch
  5. 2 tablespoons soy sauce
  6. ¼ teaspoon white sugar
  7. 3 eggs
  8. 2 tablespoons cold water

Instructions

  1. Heat chicken broth in a large pot over medium-high heat; stir in green onions.
  2. Mix 1/3 cup of cold water, cornstarch, soy sauce, and sugar in a bowl until smooth; stir into broth. Bring to a boil and simmer for 1 minute; reduce heat to medium-low.
  3. Whisk eggs and 2 tablespoons of cold water together in a small bowl with a fork. Drizzle egg, a little at a time, from the fork into hot broth. Remove soup from heat and serve.

Really good and almost great. It was bold and strong. Very chicken-y. I appreciate that in a few minutes it made a large batch with ingredients that are always on hand. Thank you for sharing! Next time I’ll make a weaker Chicken broth and cut down the soy sauce maybe to make it more mild like what we are accustomed to here; From experience, Chinese restaurants vary widely across the states. I did add a little yellow food coloring for that “authentic” look.

Delicious. Added dash of fine black pepper and used onion powder, in lieu of green onion. I also would cut out 1/4-1/3 of the cornstarch, when I make it, next. Snap peas, cut in thirds, also made a crunchy addition!

I used a 32 oz box of low sodium chicken broth. One Tbsp Soy Sauce. 1/4 cup cold water. I had to add in some garlic salt and pepper, as well as just a little bit of some Korean Style Gochujang Hot Sauce. Was great in the end.

Made exactly as per the recipe. No changes. Might use a tad bit less soy sauce next time but I think it’s growing on me as is. Served this with vegetarian fried rice also from this site for a meatless weekday meal. Yum!

Egg drop soup is our kids’ favorite soup at Chinese restaurants. I made it last night with homemade eggrolls. Everyone thought this soup was delicious. I made it exactly as the recipe called for with no “tweaks” and it was delicious. Since they ate it all, and I was craving it this morning, I may make another batch for this cold December day…it’s so easy!

my eggs didn’t get al stringy they just turned into tiny chunks but that’s fine it tastes the same but I did a different recipe I did a gallon ziplock bag of turkey broth with garlic salt, onion powder, pepper, cilantro, basil, salt and 1 fourth of a tsp of sugar whipped some eggs and poured them in it tastes great!

i made this but i used coconut aminos instead of soy sauce and no corn starch. it really had no taste but i added lots of salt, black pepper, extra extra aminos, sesame oil, parsley flakes and tapatio. it was edible but still boring.

After having a bad bout of the stomach flu for the past couple of days, eating nothing but saltine crackers,and plain white rice this tasted so good to hubs and me.I added about three chopped green onions,no white parts as our stomachs were weak. I added about 1/8 teaspoon of garlic powder,and 1/8 teaspoon of finely grated fresh ginger, ( fresh is ginger is best and good for digestion). After sipping this soup we both felt better.

I used real broth from my baked chicken. Added 1TB garlic powder 1 TB onion powder. It turned out great!
