If you want rich, fantastic chicken broth, you will adore this; you may eat it on its own or mix it into your favorite soup. This is how I always use the leftover rotisserie chicken and then freeze the broth. If you just have one chicken left, you can reduce the entire recipe in half.

Ingredients
- 2 medium rotisserie chicken carcasses
- 8 cups water
- 2 medium carrots, cut into large chunks
- 2 large stalks celery, cut into large chunks
- 1 large onion, cut into large chunks
- ½ cup fresh spinach
- 2 teaspoons salt
Instructions
- Put chicken carcasses, water, carrots, celery, onion, spinach, and salt into a large pot; bring to a boil. Reduce heat and simmer for 25 minutes.
- Strain broth and discard solids.

This is easy to prepare and makes a good broth. It’s a very solid recipe. I normally add a couple tablespoons of vinegar and cook mine for at least an hour or more for a richer broth. This amount of time works though. I did add a little turmeric for a richer color.
Great Recipe! Love the rotisserie chicken short cut. I added a tomato to mine and cooked in the crock pot.
