The conventional method of making Cajun jambalaya is used in this recipe, albeit with a bit less heat. My wife doesn’t like spicy food, but I have always adored Cajun food. I hope you like this recipe as much as everyone else did.

Ingredients

  1. 2 teaspoons olive oil
  2. 2 boneless skinless chicken breasts, cut into bite-size pieces
  3. 8 ounces kielbasa, diced
  4. 1 onion, diced
  5. 1 green bell pepper, diced
  6. ½ cup diced celery
  7. 2 tablespoons chopped garlic
  8. ¼ teaspoon cayenne pepper
  9. ½ teaspoon onion powder
  10. salt and ground black pepper to taste
  11. 2 cups uncooked white rice
  12. 4 cups chicken stock
  13. 3 bay leaves
  14. 2 teaspoons Worcestershire sauce
  15. 1 teaspoon hot pepper sauce

Instructions

  1. Heat oil in a large pot over medium-high heat. Add chicken and kielbasa; sauté until lightly browned, about 5 minutes.
  2. Stir in onion, bell pepper, celery, and garlic. Season with cayenne, onion powder, salt, and pepper; cook and stir until onion is tender and translucent, about 5 minutes.
  3. Add rice and stir in chicken stock and bay leaves. Bring to a boil; reduce heat, cover, and simmer for 20 minutes, or until rice is tender. Stir in Worcestershire sauce and hot pepper sauce.

I was looking for something easy and good and I found it. I did not measure that accurately and I used catfish instead of chicken. My husband enjoyed it and I did not have to work that hard.

I have been using this recipe for a few years. I do tweak the recipe some and add jalapeños and old bay.

It has all the right ingredients except tomatoes and thyme. We always use Ro-Tel and add the Worcestershire and Crystal at the beginning, not at the end. I use Emeril’s BAM recipe for my Cajun Seasoning and precooked rice, so a lot less liquid.

Ohhhh so yummy!!! We all loved it and decided this one is going to have to make the rotation of our most favorite meals! Because my 83 year old mother doesn’t eat onions, peppers or spicy seasonings, I cut the onion and bell pepper in quarters so it would be easy to pick out of her meal but the taste would still be there! I also omitted the cayenne pepper and hot sauce and used shrimp instead of chicken. The taste was still absolutely delicious!!!

This turned out great! Followed the recipe pretty close but I did add some gold potatoes since I didn’t have any celery on hand. Excellent recipe for a Cajun inspired tomatoless Jambalaya. I seasoned it with Greek Seasoning, Secret Aardvark Serrabanero, and added butter. Really nice recipe to use with leftover proteins like we did. Used leftover chicken breast, chicken sausages, and ground turkey patties.

This was wonderful and easy! I agree that it needed tomatoes so I added a 15oz can of diced tomatoes! I did cut the rice back to 1.5 cups and thus cut the broth down to 3 cups. Nice flavor! I am in Minnesota so don’t know authentic Cajun but it worked for us. Thank you for the easy recipe!

This recipe is so good… And easy! I’ve actually made it a few times..only change I have made was to add a can of tomato sauce (mainly because it struck me as oddly pale the first time I made it…. and I may have gotten a little heavy handed with the seasoning… I made the Cajun seasoning I found on the board, but its so yummy… Thank you for sharing this recipe!

This is really good! I decreased the rice to 1 cup uncooked rice, and made it separately. Used only 2 cups of chicken broth (not stock). Added 1 can of Ro-tel tomatoes, 14.5 oz tomato sauce and some shrimp.

Fine recipe that worked better for my family with a few modifications as per reviewer recommendations. I used a pound of shrimp instead of chicken, added in the last five minutes of cooking instead of up front, and also added a can of diced tomatoes with the broth. I used only two cups of broth in the jambalaya as I cooked my rice separately in another cup and a half of broth.

I made this for my fiance and I. I stuck to the recipe only adding one 24oz can of crushed tomatoes with herbs. you can also top this recipe with mild shredded cheddar

It’s pretty good, but I would decrease the 2 cups of uncooked rice to only 1 cup, use more kielbasa and slice it instead of dice it. I actually used leftover Thanksgiving turkey instead of chicken and it was a great way to use it up. This would also be good with kielbasa and shrimp instead of chicken. My husband loved it.

It was spicy, our 11 year old liked the flavor but not the heat. My wife and I loved it, very tasty. Of course, one simply reduces the cayenne to reduce the heat.

This was a hit even with my very fussy 9 year old granddaughter. I used chicken broth instead of stock because it’s what I had and I left out the hot sauce because I added a can of Rotel. I will definitely be making this again.

I added shrimp and a few jalapeños. Two cups rice is a bit much so I use only one cup and then two cups less chicken broth. This is a family fav!

This is a great way to dress up kielbasa. I did not use chicken. I used 2 packages of kielbasa and added one can of tomatoes. My family really liked it.

This recipe nice simple tasty but I did add some Cajun seasoning and a little salt and pepper it needed that little pinch of something otherwise it would be a little bit too plain for me.
