Easy and Delicious Ham and Potato Soup

I was given this delectable ham and potato soup recipe by a friend. It is incredibly simple, and the best part is that you can add more ham, potatoes, or other ingredients and it will still turn out fantastic.

Ingredients

  1. 3 ½ cups peeled and diced potatoes
  2. 1 cup diced cauliflower
  3. 1 cup frozen corn
  4. ¾ cup diced cooked ham
  5. ⅓ cup finely chopped onion
  6. ⅓ cup diced celery
  7. 3 cloves garlic, diced
  8. 4 cups water, or as needed to cover
  9. 2 tablespoons chicken bouillon granules
  10. ½ teaspoon salt, or to taste
  11. 1 teaspoon ground white pepper
  12. 5 tablespoons butter
  13. 5 tablespoons all-purpose flour
  14. 2 cups milk

Instructions

  1. Combine potatoes, cauliflower, corn, cooked ham, onion, celery, and garlic in a large soup pot and cover with water. Bring to a boil, reduce heat to medium, and cook until potatoes are tender, 10 to 15 minutes. Stir chicken bouillon, salt, and white pepper into mixture.
  2. Melt butter in a saucepan over medium-low heat; whisk in flour to make a paste. Cook for 1 minute and gradually whisk milk into flour mixture until smooth. Continue cooking until thick, 4 to 5 minutes, whisking often.
  3. Stir milk mixture into soup and cook until heated through, 5 to 10 minutes.
  4. Bouillon can be broth you have prepped ahead and frozen, and garlic needs to be fresh if you can.

love it. make it 3 or 4 times per year. substitute hot italian sausage for the ham and leave out the cauliflower

I liked this recipe, but I made a couple of changes for preference and because of what was in the fridge. I did not have celery, so I substituted yellow pepper. I used red, unpeeled potatoes. I cooked in chicken broth in place of water, so I skipped the bouillon. I added some dried herbs and a 1/2 t smoked paprika. I may thicken a bit more next time, so it will be more chowder like.

Fantastic recipe! I added broccoli instead of cauliflower because that’s what I had on hand. I also added about 4 ounces of Velveeta at the end for my cheese loving family.

So good! My super picky 12 year old who hardly eats anything unless it’s mac and cheese loves this, and goes back for seconds every time I make it. I used a potato masher at the end, and topped some shredded cheese.

I loved this!! One of the best soups I’ve ever made. I also added a little cheese to my roux when I made it. Topped it with bacon bits and omg!!! Soooo Delish!!

Delicious. Made a couple of small changes. I used smoked sausage instead of ham. If you want a richer broth, use 1/2 c of heavy cream and 1 1/2 c of milk. Great on a cold winter night!!

We loved it. I made a little extra overall, but failed to cook enough potatoes, It was slightly too soupy. Also, I discovered no froz corn, just creamed corn, or, fresh corn. So I added 2 cobs of corn (with corn sliced off the cob), to the rest of the vege’s. Before I added the roux to the vege’s, I added both cans I had of creamed corn. When mixed, poured it into the vege pot. Worked well. My partner loved it.

I added less potatoes and more cauliflower. And when I made the roux, I added both shredded cheese and processed cheese to make it into cheese soup. Very good. Reheated very well.

Easy and delicious it is! Even the little ones have asked that we have it again for supper. I doubled the potatoes and ham, and added 1 cup more broth. Didn’t have cauliflower to add, but we didn’t miss it.

Used all chicken broth vs plain water. Left out cauliflower but added carrots as that’s what was on hand. Before adding to the potatoes and broth, I sautéed the onion, carrots, and some celery in butter til the onion was clear as I prefer the taste of the onion when slightly cooked than when added raw – it’s a milder flavor in my opinion (and I like onions!) Put in double (maybe triple?) the called for amounts of both corn and ham as I was wanting a ham and corn chowder — the result is just perfect! Super happy and will make this again for sure….
