Everyone supposedly has the best slow cooker chili recipe, I am aware of that. I will now add one more to the list, which is this one. I think this one is a worthy challenge to everyone out there. Please share your thoughts with me so that we can come up with the ideal recipe for slow cooker chili. This has always been a family and friend favorite. Serve with sliced jalapenos (or habaneros if you prefer the spice), sour cream, grated Cheddar cheese, minced chives, hot sauce, and toppings as desired.

Ingredients
- 1 ½ cups dry cheese tortellini
- 1 tablespoon butter
- 1 cup matchstick-sized carrots
- 1 onion, chopped
- 4 cups chicken broth
- 1 (15 ounce) can diced tomatoes, drained
- 2 cups chopped dandelion greens
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- salt and ground black pepper to taste
Instructions
- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in tortellini and cook uncovered, stirring occasionally, until tender yet firm to the bite, 10 to 11 minutes. Drain.
- Melt butter in a large pot over medium heat. Add carrots and onion; cook and stir until slightly softened, about 5 minutes. Add chicken broth, tomatoes, dandelion greens, garlic powder, basil, salt, and black pepper. Bring to a boil. Reduce heat to medium-low and simmer until flavors combine, 10 to 15 minutes.
- Stir tortellini into the pot and serve.
- Substitute oil for the butter if desired.
- Substitute a 9-ounce package of fresh tortellini for the fresh if desired.

My family really enjoyed this soup! I foraged some dandelion greens from my backyard to use and it turned out great. The only changes I made is that I added mushrooms, I added like a cup more of chicken broth, some tomato paste, and thyme instead of basil since I didn’t have any. My family loved it and I will make it again.
