Ingredients
- ½ pound lean ground chicken or turkey
- ½ medium onion, diced
- 1 clove garlic, minced
- 2 teaspoons chili powder
- 1 (5.7 ounce) package Knorr® Rice Sides™ – Creamy Chicken
- 1 (10 ounce) can low-sodium diced tomatoes and green chilies
- 1 (16 ounce) can low-sodium refried beans
- 1 tablespoon chopped fresh cilantro (Optional)
- ½ cup shredded cheese (Optional)
Instructions
- Cook ground chicken and onion in a heavy pot over medium heat until no longer pink and onions begin to turn translucent, about 6 minutes. Drain excess fat. Stir in garlic and chili powder until chicken is coated and fragrant, 1 minute. Transfer chicken and onion mixture to a bowl.
- Prepare the Knorr® Rice Sides™ – Creamy Chicken (using the same pot) as directed on package instructions. When the rice is cooked and tender, add the ground chicken, diced tomatoes and green chilies, and refried bean to the rice. Stir until heated through, about 4 minutes. Serve with chopped cilantro and onion and/or shredded cheese.

Comfort food at its finest! It doesn’t hurt that it’s a quick mean to make either. I only had one can of tomatoes and chiles, but I did have a can of tomatoes and a can of whole chiles! A few minutes of chopping and done! This chili is super filling, delicious and a crowd pleaser among my ravenous teenagers! Thank you for a fantastic recipe!
This was thick, spicy and good. While cooking, I wasn’t too sure about how it was going to turn out–with the refried beans, it seemed so thick, but it all came together well. The cheese and cilantro really added to the flavor. I added some sour cream too. One change I made was to use leftover turkey breast that I cut into bite-size pieces. This is a fairly quick and filling meal.
