Classic Clam Chowder

I’ve never had a problem with this recipe for peanut butter fudge with marshmallows. It’s fantastic!

Servings: 8
Yield: 2 quarts

Ingredients

  1. 2 slices thick-cut bacon, cut into small dice
  2. 1 large onion, cut into medium dice
  3. ½ teaspoon dried thyme leaves
  4. 2 bay leaves
  5. 1 ½ cups leftover mashed potatoes
  6. 2 (8 ounce) bottles clam juice
  7. 4 (6.5 ounce) cans minced clams (clams and juice separated)
  8. 1 cup water
  9. 9 new potatoes, cut into 1/2 -inch cubes
  10. ½ cup heavy cream
  11. 2 tablespoons minced fresh parsley
  12. Salt and pepper, to taste

Instructions

  1. In a large soup kettle, fry bacon over medium heat until bacon crisps, about 5 minutes. Remove bacon; set aside.
  2. Keep 2 tablespoons bacon fat in pan. (If necessary, add oil to yield 2 tablespoons.) Add onion and saute until soft, about 5 minutes. Add thyme and bay leaves; cook until fragrant, 30 seconds or so.
  3. Whisk in mashed potatoes, clam juice (bottled and what you’ve drained from the clams) and 1 cup of water. Add new potatoes and bring to a simmer. Reduce heat; continue to simmer, partially covered, until potatoes are tender, about 10 minutes. Stir in clams, cream and parsley; season with salt and pepper.
  4. Heat through and serve, garnishing each bowl with reserved bacon.

Flavor of this Soup was excellent however, not as much clam flavor as I like for a clam chowder.

This was good but I think a bit bland. I was searching for a thick creamy recipe like in restaurants. While it’s thick, it’s not creamy thick in my opinion. I think it needed something else too.

We love clam chowder so I tried this recipe because of the reviews but We didn’t care for it too much. It was bland and didn’t taste too much like clam chowder. It tasted more like potato soup. I don’t think I’ll be making this recipe again.

I used skim milk to lighten it a bit. Sacrificed some of the rich thickness you would get with cream, but the results were still great, and the flavor was outstanding. I recommend adding a dash or two of hot sauce!

Delicious! I followed this recipe almost exactly. The only changes were extra bacon, and a little extra cream. I served these with Rosemary Drop Biscuits by FrackFamily5 for a very tasty meal.

Awesome soup!! Everyone loved it!! I added some scallops and it was absolutely delicious.. I used more heavy cream and water then suggested. I served the soup in breadbowls it was great !

Truly the best chowder I have ever had! I forgot to pick up some clam juice but added 2 extra cans of clams for the missing juice and I wish we had left-overs.
