Cathy’s Amazing Fish Chowder

Ingredients

  1. 1 pound sliced bacon
  2. 1 large onion, chopped
  3. 5 medium potatoes, peeled and diced
  4. 2 cups water, or as needed
  5. 1 ½ pounds cod fillets, cut into 1 inch cubes
  6. 1 (12 fluid ounce) can evaporated milk
  7. ½ cup whole milk
  8. 2 tablespoons butter
  9. salt and pepper to taste

Instructions

  1. Cook bacon in a large stockpot over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on a paper towel-lined plate; crumble and set aside. Drain bacon grease, reserving about 1 tablespoon in the pot.
  2. Add onion to reserved bacon grease; cook and stir over medium heat until tender, about 5 minutes. Add potatoes and fill the pot with just enough water to cover. Bring to a boil and cook until potatoes are almost tender, about 5 minutes.
  3. Add fish, evaporated milk, whole milk, and butter; bring to a boil. Reduce heat to low and simmer for 30 minutes. Season with salt and pepper.
  4. Ladle chowder into bowls and top with crumbled bacon.

Delicious!! The only thing I added was one chicken bouillon cube to add more flavor. I used haddock, but because my supermarket only had small freshly caught, I believe that may have given it a milder flavor. My husband loved it! I will definitely make this again!

Good basic recipe, added a few tweaks. Not because I thought it needed it, just to make it fit the families tastes. Followed the recipe and then added 2 stalks of chopped celery to the onions. Also added 1 tablespoon of Old Bay, and a generous shake of Oregano and Thyme, and Garlic Powder. Placed hot sauce on the table for those who wanted more spice. Great recipe will definitely be making again.

I made a few changes to add ingredients my husband and I like, but still a wonderful recipe so giving 5 stars! Added celery, garlic scapes from our garden, chicken bouillon when cooking potatoes, couple shakes of curry powder & Braggs seasoning. Used diced ham because it’s what I had instead of bacon. Also used haddock which is plentiful here in Maine! Yummy! Thanks! Also paired with popovers makes a real Maine meal. We stuff any leftover popovers the next day with scrambled eggs after toasting them!

I followed the recipe for the most part. While cooking the onions, I continued to stir the onions and bacon grease making a pseudo rue. I did substitute organic evaporated milk and coconut milk. I also added fresh jalapeño from the garden diced and cilantro as a garnish. It added a nice kick. The wife and kids loved it. This also pairs nicely with Shiner Oktoberfest beer. This will be in rotation.

I added 3 ribs of chopped celery, and 3 diced carrots. I then thickened the chowder with Wondra. It came out excellent!

Had been looking for the recipe that appeared to be most like the fish chowder my mom made. This was it. I eliminated the evaporated milk and went with all skim milk. I used unsalted grass fed butter so sea salt was an absolute must. Totally delicious!

This was very good, but I would substitute one of the cans of evaporated milk for some 1/2 and 1/2. A genuine Maine chowda!

ok, so I give this a 5 star rating because once I figured out how to give this some good flavor it turned out awesome. Instead of using water to cover the potatoes use chicken stock. It turned out amazing after a few tries when I did this instead.

I loved it! Hubby thot the fish part sounded unappealing (he doesn’t much like fish). So we basically broke it down into 2 small recipes. In mine we put the fish. In his we did not, leaving him with basically a potato soup. …. It was delicious! I’m quite fond of Mrs Dash (all the different flavors), so I sprinkled some on my chowder. But I did try it before doing that, and thot it was great that way, too. This is one we’ll make again!
