Caldereta (Filipino Beef and Chorizo Stew)

You would assume that something as straightforward as apple pie wouldn’t be as luxurious as this until tasting this apple crostata dish. But you’ll quickly realize that you were dead wrong. Even though I don’t enjoy dessert, I brought one of these home from an Italian restaurant known for its family-style dining. I relished every bite of it, even after it had become mushy with melted ice cream.

Ingredients

  1. 2 pounds beef chuck, cubed
  2. 12 ounces chorizo sausage
  3. ¼ cup garlic, minced
  4. ¼ cup white vinegar
  5. ¼ cup soy sauce
  6. 2 tablespoons olive oil, or as needed
  7. 1 onion, chopped
  8. 1 green bell pepper, chopped
  9. 3 cups tomato sauce
  10. 2 cups peeled and cubed potatoes
  11. 1 cup drained canned peas
  12. 1 teaspoon salt
  13. 1 teaspoon ground black pepper

Instructions

  1. Combine beef, chorizo, garlic, vinegar, and soy sauce in a skillet over medium heat; cook and stir until beef is browned and liquid is reduced, about 20 minutes. Remove from heat.
  2. Meanwhile, heat olive oil in a pot over medium heat; cook and stir onion and bell pepper in hot oil until onion is translucent, 5 to 10 minutes. Add tomato sauce and simmer until liquid is slightly reduced, 3 to 5 minutes.
  3. Stir beef-chorizo mixture into tomato sauce mixture; bring to a boil. Reduce the heat to medium-low, cover the pot, and simmer for 30 to 40 minutes.
  4. Stir potatoes, peas, salt, and pepper into stew; simmer until beef is tender and potatoes are cooked through, 20 to 30 minutes. Add water if needed.

Pretty much followed the recipe and got a very tasty dish! The only thing I changed was that “30-40 minutes” of simmer time in step 3. Beef was way too chewy at that point; expect to double or triple that time.

This was delicious! The family loved it and it was so worth the 2 hours it took. We decreased the amount of garlic, but it was so delicious. It was super hearty and pretty much a flavor punch.

5 stars for taste. Potatoes took a long time to cook in the mixture. Will cook them separately next time and add to the finished stew.

Major crucial ingredient missing from this beef stew to be called Caldereta. Caldereta is a liver sauce based stew. So either sauté and mash beef liver into this stew or add a can of liver pâté. It changes everything for the better.

The Chorizo just melts into the tomato base and adds a ton of flavor. Not your traditional beef stew, but it is great when you are bored of the same old stuff. I threw this on top of steamed brown rice and it was awesome…everyone enjoyed it and it made a good leftover as well.
