Budae Jjigae (Korean Army Base Stew)

The flavor of this tomato sauce in a can is incredible. Both pizza sauce and spaghetti sauce can be made with it. It freezes wonderfully, too.

Ingredients

  1. 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), sliced
  2. 14 ounces smoked sausage (such as Eckrich®), sliced
  3. 1 large onion, sliced
  4. 6 ounces kimchi
  5. ¼ cup Korean red pepper powder
  6. 3 tablespoons soy sauce
  7. 3 tablespoons gochujang (Korean hot pepper paste)
  8. 5 cloves garlic, minced
  9. 1 pinch ground black pepper
  10. 1 bunch green onions, chopped
  11. 2 (32 ounce) containers chicken broth
  12. 7 ¾ ounces ramen noodles (such as Ottogi Ramyonsari®)
  13. 1 slice American cheese (Optional)

Instructions

  1. Divide luncheon meat into 2 piles on either side of a stock pot. Layer sausage, onion, and kimchi on top, leaving an empty space in the center of the pot.
  2. Mix red pepper powder, soy sauce, gochujang, garlic, and black pepper together in a small bowl; pour into the center of the pot. Sprinkle in green onion. Pour in chicken broth; bring to a boil. Reduce heat and simmer stew, stirring occasionally, until flavors combine, about 10 minutes.
  3. Bring a pot of water to a boil; add ramen noodles. Cook and stir until partially cooked and softened, about 2 minutes. Drain; stir into stew. Cook and stir until ramen noodles are tender but firm to the bite, about 5 minutes. Top stew with American cheese.
  4. Anchovy broth can be substituted for the chicken broth if desired.

I really like this recipe! It was rich and mildly spicy. I could not find the Korean red pepper powder or the red chili paste so I substituted Cayenne pepper and Indonesian Sambal sauce so mine wasn’t authentic but it was good. I used three different types of leftover sausage that I had in the fridge and that was kind of useful. Next time I may add more kimchi and cube the Spam before putting it in the pot. Prep was fast, fun dish! A year later: I have made this dish a couple more times with Gochujang red pepper paste and with more kimchi and both added to the flavor of the dish. I also cube the spam smaller and that is cool too. Just about any ramen noodle works well. Love this recipe!

This is a great BASE recipe. I actually changed it bit b/c people said it was bland (I also live close to Korea so…) #1 I used beef broth NOT chicken (has no flavor) #2 I added fresh tomato and more garlic to get that nummy soup flavor #3 I used a sweet Taiwan Style sausage to compliment the spicy of the Kimchi These additions changed the flavor A LOT. I also added a bit more Gochujang and Korean pepper powder. And, lets be real, I used the noodles from Cup O Noodles.
