Brazilian Fish Stew

When you only have a few minutes, this recipe is perfect for those tiny frozen lobster tails. The lobster becomes more moist thanks to the olive oil, and the lemon pepper enhances its flavor.

Ingredients

  1. 3 tablespoons lime juice
  2. 1 tablespoon ground cumin
  3. 1 tablespoon paprika
  4. 2 teaspoons minced garlic
  5. 1 teaspoon salt
  6. 1 teaspoon ground black pepper
  7. 1 ½ pounds tilapia fillets, cut into chunks
  8. 2 tablespoons olive oil
  9. 2 onions, chopped
  10. 4 large bell peppers, sliced
  11. 1 (16 ounce) can diced tomatoes, drained
  12. 1 (16 ounce) can coconut milk
  13. 1 bunch fresh cilantro, chopped (Optional)

Instructions

  1. Stir together the lime juice, cumin, paprika, garlic, salt, and pepper in a bowl. Add the tilapia and toss to coat. Cover and refrigerate at least 20 minutes, up to 24 hours.
  2. Heat the olive oil in a large pot over medium-high heat. Quickly fry the onions in the oil 1 to 2 minutes. Reduce heat to medium. Add the bell peppers, tilapia, and diced tomatoes to the pot in succeeding layers. Pour the coconut milk over the mixture. Cover the pot and simmer 15 minutes, stirring occasionally. Stir in the cilantro and continue cooking until the tilapia is completely cooked through, another 5 to 10 minutes.

I think it could use some more spice…maybe calabrian chili pepper or dried pepper flakes. Also a lot of broth- instead of serving as a stew, I served it like gumbo with brown rice. Good option for cooking fish in a new way, and bonus- lots of veggies.

This was delicious and cheap to make. I used canned stewed tomatoes simply because I have too many cans of them. I added two tablespoons of brown sugar and a little more salt and pepper.

After hearing about it on Breaking Bad, I wanted to make it and this is AMAZING! I didn’t have coconut milk, so I substituted almond milk and heavy whipping cream. I also substituted celery for the green pepper. Adding a shake of cayenne added just the right amount of extra kick.

I made this for 4 servings. I followed the recipe exactly. The tilapia marinated overnight. It was a little bland when I tasted the finished stew. I then added 1 tbsp. of lime juice and a bit more salt and pepper. I also used the optional fresh cilantro. Delicious!

I made this with salmon instead of tilapia. I also only used one large onion and one large bell pepper. My husband loved it! It was really good and easy to make. I served it with buttermilk biscuits. Will definitely make it again.

Terrific. I modified it by using one chopped jalapeño pepper in stead of the bell peppers and I added fresh spinach. I also substituted cod for the tilapia
