Ingredients
- ½ pound thick-cut bacon, chopped
- 1 large yellow onion, chopped
- 1 ½ pounds ground beef
- 3 cloves garlic, chopped
- 1 tablespoon ground cumin
- 3 (15.5 ounce) cans kidney beans, rinsed and drained
- 1 (14.5 ounce) can fire-roasted diced tomatoes
- 2 cups water
- ¼ cup chili powder
- 1 teaspoon liquid smoke flavoring
- salt and ground black pepper to taste
- 1 dash hot pepper sauce (such as Tabasco®), or to taste (Optional)
Instructions
- Cook bacon and onion together in a large pot over medium heat until the onion is translucent, about 5 minutes. Add ground beef, garlic and cumin to the pot; cook and stir until the beef is completely browned, 7 to 10 minutes.
- Stir kidney beans, diced tomatoes, water, chili powder, liquid smoke, salt, black pepper, and hot pepper sauce into the beef mixture; bring to a simmer and cook until thick, about 1 hour. Skim excess grease if desired.
- Use more or less water to thin or thicken chili.

Made it 3 times, very good. Always requested when my daughter and family come to visit.
One for the books. Wow, yummy. Didn’t have bacon on hand so went without. Only had regular diced tomatoes, used 2 cans. Also only used 2 cans kidney beans. As 2 lbs ground beef was browning, I put 4 or 6 tablespoons of grill mates sweet and smoky rub on the meat. Added a can of diced green chilies. Increased liquid smoke to 3 teaspoons. Family wants it again.
I really loved the flavors I used black beans.
Loved this chili! I left out the liquid smoke (yuck) because it has bacon for smoky flavor anyway.

Very good recipe made as written. Suggestions for next time: Cook bacon until crispy, remove bacon then cook onions. Use Pinquinto and Navy/White beans. Use 1 lb ground beef, 1/4 lb bacon. Increase smoke flavor to 2 tsp.
Of course the amusing title drew me to this chili, but oh my! Seriously good chili! I,’ve used many a recipe from this site and others, but I keep returning to this one. so perfect with some shredded cheese, sour creme, and Fritos! Only change I made was to use a 12 oz Porter beer instead of the water!
This was so simple and came out great! The only modification I made was 1/2 the cumin. I put a little extra tomato sauce in the kids portion to remove some spice, but otherwise I thought the spice was perfect for adults as-is. We will make this one again!
I gave this recipe a try last night for my family. The base is great to start off a chilli, but I had to alter the recipe to give it a bit more excitement. First off, I used black beans, pinto beans and kidney beans instead of 3 cans of kidney beans. It gave more flavour. I used two cans of fire-roasted diced tomatoes. I used cayenne pepper along with chili pepper to give it a bit more kick. Loved the liquid smoke as an addition and I added Frank’s Red Sauce, more than a dash. After the changes, it was awesome. Had some heat and I loved the simplicity of the recipe.
This was excellent! Filling, thick, with a wonderful smoky taste, and extremely easy to make without a ton of slicing and dicing or washing boatloads of dishes afterward. A lot of soups tend to involve so much effort that they’re almost not worth the effort it takes to make them, but this soup really was the best of both words. Highly recommend. This chili should be very known and very cared about.
Was a little skeptical of the smoke flavoring, but turned out pretty good. This is my current go to chili!
Reduced ingredients for 1 lb of beef, but otherwise exactly as written. I skimmed as much fat as I could, but it was still pretty greasy. In spite of the bacon, the overall flavor was just meh. Sorry, but I won’t be making this again.
It was really good! I didn’t like how watery it was, and fortified it with plain unflavored oatmeal, thicked it up to exactly how I wanted, and added some extra nutrition to it. Wait for the amount of oatmeal you add before you add more to simmer in and obviously stir to get the consistency you like.
This is my go to chili recipe to riff on. The proportions and ingredients are excellent.
Oh my gosh! It’s sooo good! It tastes good while you’re making it, it tastes good when it’s done, and it’s still amazing reheated!
I will make this again as written, but since we’re staying at home as much as possible during the COVID-19 pandemic, I substituted some ingredients to what I had on hand. Another review mentioned using chorizo to make up a shortage on bacon. I had no bacon at all, but did have chorizo, so I substituted it for the bacon. Shallot instead of onion; beef broth instead of water; 1 can of black beans and 1 of kidney beans; added a rib of celery and some frozen corn. The spices, smoke flavor & hot sauce as written were spot on for our taste. We ended up with a beefy, warming, colorful, delicious pot of chili. Bonus – the house smelled amazing while it was cooking. Topped it with cheddar, sour cream & green onion. Yum Yum Yum! Thanks Bob, for giving me a direction to go in. Can’t wait to make it as written when life and grocery store shelves return to normal.

Excellent. Used beef broth instead of the water. Best chili I’ve had in a long time. This is really nice without all of the tomato sauce / paste tomato’y flavour that seems to be in every other chili recipe.
I have used the same chili recipe for years. After trying this recipe, I can’t go back! This is the best chili recipe ever!
