Ingredients

  1. 2 tablespoons canola oil
  2. 2 pounds bison meat, cut into 1-inch cubes
  3. 1 tablespoon canola oil
  4. 1 cup minced yellow onion
  5. ½ cup minced celery
  6. 2 cloves garlic, minced
  7. 2 tablespoons flour
  8. 4 cups low-sodium chicken broth
  9. 1 cup water
  10. 2 tablespoons white wine
  11. 1 teaspoon salt (Optional)
  12. ½ teaspoon ground black pepper
  13. 3 whole cloves
  14. 1 (8 ounce) can tomato sauce
  15. 2 tablespoons chopped fresh parsley
  16. ¼ teaspoon ground thyme

Instructions

  1. Heat 2 tablespoons canola oil in a Dutch oven over medium-high heat; brown the bison in oil, 2 to 3 minutes per side; remove bison and set aside. Pour 1 tablespoon canola oil into the Dutch oven; cook and stir the onion and celery in the oil until soft, about 5 minutes. Add the garlic; cook and stir another 2 to 3 minutes. Sprinkle the flour over the mixture and stir to coat. Stir in the broth, water, wine, salt, pepper, cloves, tomato sauce, parsley, and thyme to the mixture; bring to a boil. Return the bison to the mixture and stir through. Reduce heat; cover and simmer until meat is fork tender, about 1 hour.

I added a cup of fresh raw corn, from the cobb and a cup of steamed fresh green beans, a large can of peeled whole tomatoes which I cut into smaller sizes, 4 cloves of garlic, a teaspoon of celery seed, 1T of chili powder and fresh organic thyme (towards end). And 4 small sweet potatoes cut up. Agree with another reader, mine needs a bit of thickening so I made mashed potatoes and added a dollop to the center of each bowl when serving with fresh organic chopped cilantro.

Very good! Had a lot of flavor. I would up the garlic by one clove next time. But my husband and I like garlic. I added the 3tbls of flour like others had suggested and I probably would have done one more because I like thick stew.

I loved this! I did add potatos and carrots and an extra tablespoon of flour to thicken up the sauce.

Excellent comfort food for a cold winter’s night. I changed it to 3 tablespoons flour and added carrots during the last 40 minutes. I would back off on the salt next time, it really doesn’t need it. Lots of flavor. The family loved it.

bison being expensive,but healthy i decided to give it a try. i added to this recipe, potato’s, carrots,and rutabaga which i added the last half hour to forty five minutes. i would add another tablespoon of flour, and a bay leaf next time, as i thought it should be a bit thicker. i will make again.
