This beef enchilada soup is delectable, filling, and quick to prepare. It can be made on the stovetop or in a slow cooker. It’s crucial to add sliced flour tortillas on top. They behave like noodles and taste great. Offer anything else that sounds nice as well, including shredded cheese, avocado, cilantro, sour cream, and more seasoning.

Ingredients

  1. 4 pounds ground beef, cooked and drained
  2. 1 (28 ounce) can crushed tomatoes
  3. 2 (14 ounce) cans beef broth
  4. 1 (15 ounce) can kidney beans
  5. 1 (15 ounce) can black beans
  6. 1 (14.5 ounce) can enchilada sauce
  7. 1 (12 fluid ounce) can sweet corn
  8. 1 (4 ounce) can chopped green chilies
  9. 2 (1.25 ounce) packages taco seasoning

Instructions

  1. Combine ground beef, tomatoes, broth, kidney beans, black beans, enchilada sauce, corn, chilies, and taco seasoning in a slow cooker; mix well.
  2. Cover and cook on Low for 8 hours or High for 4 hours.
  3. We use mild enchilada sauce, but use what you prefer.
  4. You can use any canned tomatoes you like — crushed, sauce, or diced all work well.
  5. If making soup on the stovetop, heat it low and slow to allow flavors to meld. It will make your house smell fantastic and drive the family nuts!

Second time i’ve Made it and family loves it. As family is small, halved the recipe and also threw in a few chopped onions.

I substituted chicken and chicken broth because I didn’t have any ground beef on hand. Wow it was good. I served it Texas style by cooking up some rice so that a spoonful could be ladled into the middle of the bowl. Delicious with tortillas!

I added another can of enchilada sauce & a little hot sauce , turned out excellent !

I put a little garlic powder and onion powder in it. If I’d had time I would have finely chopped an onion and put in it. It was a good supper.
