Ingredients
- 3 tablespoons all-purpose flour
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- ½ teaspoon dried thyme
- 2 pounds cubed beef stew meat
- 3 tablespoons olive oil
- 2 ½ cups apple cider
- ¾ cup water
- ¼ cup apple cider vinegar
- 1 large bay leaf
- 4 carrots, sliced
- 3 potatoes, cubed
- 2 onions, diced
- 2 celery stalks, chopped
- 1 large McIntosh apple, sliced
Instructions
- Combine flour, salt, pepper, and thyme in a bowl. Toss beef cubes in the flour mixture.
- Heat olive oil in a Dutch oven or large pot over medium-high heat. Working in batches, brown beef cubes on all sides. Combine browned meat, apple cider, water, and cider vinegar in the pot and bring it to a boil. Add bay leaf; reduce heat to low. Simmer, partially covered, for 1 hour.
- Stir in carrots, potatoes, onions, celery, and apple and simmer until the vegetables are tender, about 1 hour more.

This just didn’t work. I m sorry but that is enough vingar for ten times that. It was horribly sweet and terribly sharp. I tried to ulter the recipe to make it something palatable but failed. I m having a hard time imaging anyone that thought this was good. It needs a lot more. Onions asborb the vinger so it stays with it It needs to be cooked down for hours. nees a lot less vinger, more of everything else. it was just not good! And we love vinger.

My family’s favorite! Leftovers were gone the next day. The qpple cider and vinegar adds a wonderful flavor, though it doesn’t taste like a glass of apple cider-my family couldnt figure out what the flavor was, they just loved it!
Needed cornstarch or flour to thicken it because it was runny. Add mushrooms cause they soaked up the wonderful broth and were delicious!!
Made it just as written and it was delicious.
I used goose breast instead of beef. The gamey taste helped to balance the sweetness of the apple cider. Serve with a dollop of sour cream and it is quite well balanced.

Nice flavor combination. It definitely takes more than an hour for veggies to be tender. If you like to simmer and have the scent in your house, be careful of scorching.
Had to change the apples, as the ones needed were not in season, didn’t matter though. The stew cooked up amazingly easy and tasted WONDERFUL.

I made it following the recipe. Imo, all the lower ratings that said it was too sweet and suggested modifying in some ways were spot on. Of course taste is subjective, but this was not right.

Loved it I made it exactly as written and it was good. Did think it was a tad to sweet so I think I will use gala apple next time instead to reduce some of the sweet. I was worried after boiling the meat that it would be tough or dry but it wasn’t. The liquid looked like there wouldn’t be enough but I trusted the recipe and didn’t add extra and all the liquid from the veggies made it perfect! Going into the recipe jar for sure to add into rotation.
This stew was amazing!! I followed the recipe except for I used a pink lady apple becuz its what i had on hand.I honestly dont think it makes that much of a difference as long as you are using a sweet not tart apple( also,peel it) the meat was tender with just the right hint of sweetness,even my picky kids loved it,give it a try!!
I thought it was a waist of good stew beef. I love apples but there was by far to much apple taste for me and my family.
