Ingredients
- 1 teaspoon olive oil
- 1 small onion, diced
- 1 (28 ounce) can diced tomatoes
- 2 (15 ounce) cans black beans, drained
- 1 tablespoon chili powder, or to taste
Instructions
- Heat olive oil in a large saucepan over medium heat. Add onions and saute until transparent, 5 to 7 minutes.
- Add tomatoes, beans, and chili powder; bring to a simmer. Cook, stirring occasionally, for 20 minutes or longer.
- Use any type of beans (black, kidney, pinto, or whatever you like) but for best results use 2 different types.
- This chili gets better the longer it cooks.
