White Bean-Chard Soup

Ingredients

  1. 4 tablespoons extra-virgin olive oil
  2. 1 large onion, diced
  3. 3 stalks celery, diced
  4. Kosher salt
  5. 2 15.5-ounce cans cannellini beans, drained and rinsed
  6. 4 cups low-sodium chicken broth
  7. 1 12-ounce jar roasted red peppers, drained and coarsely chopped
  8. 5 cloves garlic (4 minced; 1 whole)
  9. 1/4 cup chopped fresh cilantro
  10. 1 bunch Swiss chard, leaves roughly chopped
  11. Freshly ground pepper
  12. 4 thick slices sourdough bread
  13. Lemon wedges, for serving (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a medium pot over medium-high heat. Add the onion, celery and 1 1/2 teaspoons salt and cook until the vegetables are golden brown, about 5 minutes. Add the beans and broth, bring to a simmer and cook 15 minutes.
  2. Meanwhile, heat the remaining 3 tablespoons olive oil in a large skillet over medium heat. Add the roasted peppers, minced garlic and cilantro and cook until the garlic is soft, about 2 minutes. Stir in the chard, cover and cook until wilted, 1 to 2 minutes. Scrape the contents of the skillet into the pot and simmer until heated through, about 5 minutes. Season with salt and pepper.
  3. Toast the bread, then rub with the whole garlic clove. Serve the soup with the bread and lemon wedges, if desired.

Tried this great recipe tonight. We didn’t have any cilantro or roasted red peppers, so I subbed a can of San Marzano tomatoes instead and it came out delicious!

Sweating that much diced celery with the onion (from the salt) takes much longer than 5 minutes to start to carmelize (golden), just to keep in mind.

Very good healthy soup. Added shredded carrots and a minimal amount of roasted chicken breast for my carnivore family members. I would also suggest adding seasonings of your choice to kick it up a notch.

A quick and hearty soup. At this time were having the coldest and most windy weather of the 2017 winter season. Preparing the soup and enjoying it helped to keep us warm. I will definitely make this again.

My family loved this! The cilantro really makes it.  I subbed dry, sun-dried tomatoes for the peppers as my husband dislikes peppers (soaked them in water for over an hour, cut into strips) I also sprinkled Mrs. Dash Spicy Jalapeño.  I will definitely make this again!
