Veggie Tortellini Soup

Ingredients

  1. 8 cups vegetable broth
  2. One 6-ounce can tomato paste
  3. One 10-ounce package frozen mixed vegetables
  4. One 9-ounce package fresh cheese tortellini
  5. 1/2 cup heavy cream
  6. Kosher salt and freshly ground black pepper
  7. Dried parsley flakes, for garnish
  8. Dried basil, for garnish

Instructions

  1. In a medium pot over medium heat, bring the broth to a simmer. Stir in the tomato paste. Add the frozen vegetables and return to a simmer. Add the tortellini and cook until just tender, 3 to 5 minutes. Add the heavy cream. Taste and adjust the seasoning with salt and pepper. Garnish with dried parsley and basil and serve.

This was so easy and SUPER tasty!! I was afraid it would be bland but I’m happy to report that, with a little seasoning, it’s full of flavor! I used half veggie broth, half chicken broth and the cream at the end adds so much!! When I make it again, I’ll probably add twice the veggies to make it a tad more veg-forward but I’m overall very pleased with this recipe and will add it to my list of easy “go-to’s!!”

This recipe was so simple and delicious. I used better than bouillon chicken broth rather than vegetable broth and a sausage and cheese tortellini rather than a cheese only tortellini. It was even better the next day.

Yummy and SUPER easy to make recipe. Can all be done in one pot so easy clean up. Very flavorful and I did add some Zahtar spices to add some zip. I put all the frozen veggies in my freezer that I could find…peas, corn, lima beans. Chopped up some fresh carrots. Really you can add any veggies (fresh or frozen) you like. Maybe next time I’ll add mushrooms and try some other spices.
I also added two packages of the tortellini and added about another 1/2 cup of broth. I used Better Than Buillion Vegetarian No Beef Base.

Great tasting!  We used Buitoni Sweet Italian tortellini and included sage in sauce.  Sprinkled with Parmesan at table.
