Ingredients
- 2 tablespoons olive oil
- 1 tablespoon finely chopped garlic (about 2 cloves)
- 1 tablespoon finely chopped ginger (can also be finely grated with a rasp grater)
- One 32-ounce box low-sodium chicken broth
- 2 tablespoons soy sauce
- One 9-ounce package frozen meat ravioli
- 1 cup packed baby spinach leaves, roughly chopped
- 1/4 cup thinly sliced scallions (about 2 stalks)
Instructions
- In a medium pot, heat the olive oil over medium heat, add the garlic and ginger and cook for 1 minute. Add the chicken broth and soy sauce and bring to a boil. Add the ravioli and simmer for 5 minutes. Stir in the spinach and cook for another minute to wilt. Ladle into bowls, top with scallions and serve immediately.

Thought it was very good. Have made it many times. I have also varied it by using my own homemade stock, sometimes using finely shredded cabbage, I add a little more soy and hoisin. Overall, I can recommend it.

Easy and delicious! After doing the ginger and garlic in olive oil, I put everything in the crockpot and let it cook for 2 hours on high… wouldn’t change a thing!
Great recipe! I had grilled chicken ravioli from the big box store and didn’t know what to do with them. I cubed a chicken breast and sautéed in olive oil oil, my husband likes to see his chicken, and then added the rest of ingredients according to the directions. Fast and delicious! We both loved it!
