Ingredients
- 2 tablespoons salted butter
- 4 cloves garlic, minced
- 1 medium yellow onion, finely diced
- 1 sweet potato, peeled and finely diced
- 1 tablespoon curry powder
- One 13.5-ounce can coconut milk
- 1 cup chicken broth
- 2 tablespoons honey, plus more to taste
- 1/4 teaspoon kosher salt, plus more to taste
- 1 rotisserie chicken, meat pulled and skin and bones discarded
- 1/4 cup fresh cilantro leaves, chopped, plus whole leaves, for garnish
- A few dashes of hot sauce, such as sriracha
- 1/2 lime, juiced, plus 6 lime wedges, for serving
- 1/2 small mango, diced, for garnish
Instructions
- Heat the butter in a large skillet over medium-high heat. Add the garlic, onion and sweet potato to the skillet and cook, stirring, for 2 minutes. Sprinkle the curry powder over the vegetables and continue cooking for another minute. Reduce the heat to medium low and pour in the coconut milk and broth, stirring to combine. Mix in the honey and salt. Allow the sauce to heat up until gently simmering.
- Add the chicken to the sauce, tossing to coat, and allow it to simmer until warmed through, about 3 minutes. Turn off the heat. Mix in the chopped cilantro, hot sauce and lime juice.
- Ladle the soup into bowls. Garnish with mango cubes, cilantro leaves and lime wedges.

This was yummy! I don’t love sweet potatoes but prepared this way I didn’t mind. I sprinkled red pepper flakes on my serving for a bit of heat. Next time I might add chopped peanuts to the top for some crunch. The mango was a nice touch. We used about half of a rotisserie chicken (Costco) and it made a lot! We had enough for 2 meals and I took a serving to work for lunch.
Love her recipes but OMG..this was horrible all around.Even added seasoning salt,still gross. Not a keeper in my book.sorry Rea
I made this for my cookbook club about a year ago and it is a fairly cheap go to recipe for me. However…. I, myself, found it very bland and when I make it on my own, I often use the recipe as a template and then add more ingredients in … Kinda measuring from the heart, haha. But otherwise, my husband I I enjoy the recipe and it’s perfect for struggle weeks when my crockpot is my best friend!

Delicious!! It’s such a cozy meal for cold Colorado days and nights. I had leftover turkey from Thanksgiving. I used just white meat. Don’t think I had quite the equivalent of a whole chicken but it had plenty of meat (good meat to sweet potato ratio). I served mine over cooked basmati rice and added a little extra sriracha. Will make again soon. Now I’m going to go have a second helping

Absolutely Delicious and oh so easy! I left out the sweet potato because I didn’t have any and added 3 tablespoons of the curry powder to amp up that flavor, I tasted and wanted more. It was FABULOUS WITH RICE. I MADE A SIDE OF EVERYTHING BAGEL BROCCOLI! Will add this recipe to my week night suppers! Thanks Ree
Delicious curry! My family really enjoyed it! Great recipe. Don’t listen to the reviews saying they didn’t like it! They probably didn’t even make it or just don’t like curry! You can add more curry or seasonings to your liking but it is a good basic easy curry recipe. Some people give bad reviews because they don’t have basic cooking skills and can’t make adjustments to suit what they like.
Just awful. Even with adding additional seasoning, this dish remains bland. A poor example of what we Americans expect from a curry.
