Ingredients

  1. 3 ½ cups vegetable broth
  2. 3 cups (1-inch) potato chunks
  3. 1 teaspoon salt, or to taste
  4. 1 teaspoon dried oregano, or to taste
  5. 1 teaspoon dried parsley, or to taste
  6. 1 teaspoon dried cilantro, or to taste
  7. ½ teaspoon ground black pepper, or to taste
  8. ¼ cup finely chopped red bell pepper
  9. ¼ cup finely chopped white onion
  10. ¼ cup finely chopped leek
  11. ¼ cup finely chopped carrot
  12. ¼ cup finely chopped celery
  13. 4 garlic cloves, minced

Instructions

  1. Combine vegetable broth, potatoes, salt, oregano, parsley, cilantro, and pepper in a saucepan over medium-high heat. Bring to a boil; cook until potatoes start to soften, about 5 minutes. Stir in garlic. Add red bell pepper, onion, leek, carrot, and celery; simmer until potatoes are very tender when pierced with a fork, about 10 minutes more.

I will definitely make this again, it was a big hit. It’s a great base that can be tweaked. I did make some changes; I tripled celery, carrots, red pepper and onion. I didn’t have leeks, used about an extra cup of potatoes. I added some tomato paste as another reviewer suggested as well as cayenne pepper which I often use to kick up soups. I used extra broth and added more of the spices since I had extra vegetables. I used fresh cilantro in it and used generous amounts for garnish. I would double the recipe next time too, I wish I had more leftovers!

I added extra potatoes, tomato paste, extra carrots and celery, green beans and hot sauce. Kids loved it!

11.10.16 ~ This is a nice soup/stew, but a little mild for our tastes. I doubled the recipe as I was making it for my in-laws. They will love it. I added a little cayenne pepper to the portion I kept for us. We liked the zip that it added.
