Any time of year, this is the traditional sweet and sour summer beet soup served as a shooter. If you’d like, you can add a little vodka, although I normally don’t. The flavor is enough pungent for us. Fix a tray of shooters all at once so that individuals may simply assist themselves.

Ingredients
- 2 (15 ounce) cans whole baby beets
- ¾ cup vegetable broth, or more if needed
- ½ cup sour cream
- ⅓ cup fresh lemon juice
- ⅓ cup white sugar
- salt to taste
- 5 tablespoons sour cream, or as desired
Instructions
- Place beets and their juices, 3/4 cup vegetable broth, 1/2 cup sour cream, lemon juice, and sugar into a blender. Blend until smooth; thin with more vegetable broth, if desired. Taste and season with salt as needed.
- Transfer borscht to a bowl. Cover and chill at least 3 hours or overnight.
- Whisk borscht; spoon 3 to 4 teaspoons into each shooter. Top each shooter with about 1/2 teaspoon of sour cream.

Made this recipe exactly how it was written except I used sliced beets-my store didn’t carry baby beets. I was hoping that based on the title the final result would not be as sweet as beets can be. However, we didn’t taste any “sour.” We won’t be making this again, but it was very simple and fast to make and as long as you like the sweet taste of beets, you will probably enjoy the recipe.
We made these for GS World Thinking Day to represent a food item from Russia. (Non-alcoholic of course.) I will admit that most of it ended up in the trash, but I think that was more of an indication of 5-10 year olds being the major age group present at the event. We did have several people like it, my family certainly did. I ended up using sliced beets instead of baby since the only baby beets I could find were pickled. This will be going on our family make again list. Delicious!
