This hearty, creamy tomato soup is cooked simply in a slow cooker with half-and-half and Italian plum tomatoes. It is a fantastic option on a cold winter day.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 2 onions, sliced
- 2 cloves garlic cloves, smashed and peeled, or more to taste
- 2 (28 ounce) cans Italian-style plum tomatoes, drained
- 4 cups vegetable broth
- 1 (28 ounce) jar tomato sauce
- 6 sprigs flat-leaf parsley
- 1 teaspoon salt
- 1 teaspoon white sugar
- 2 cups half-and-half
Instructions
- Heat olive oil in a medium skillet over medium-high heat. Add onions and garlic. Cook, stirring often until fragrant, about 30 seconds. Place in the bottom of a slow cooker.
- Add plum tomatoes, vegetable broth, tomato sauce, parsley sprigs, salt, and sugar to the slow cooker. Cover and cook on High until tomatoes are stewed, 3 to 4 hours. Remove parsley sprigs.
- Puree the soup using an immersion blender.
- Stir half-and-half into pureed soup. Cover and cook until heated through, 20 to 30 minutes.
- You can use a food processor to puree soup. Work in batches. Be careful as soup will be hot.
- Substitute chicken broth for the vegetable broth if preferred.

Our 9 year old loves grilled cheese and tomato soup. We followed the recipe and he said it’s a keeper!
Solid recipe. Kids loved it. Texture after using immersion blender was perfect. Adjustments: used 1 medium onion vs 2, added 2 small carrots (shredded) as it imparts a natural well balanced sweetness. It doesn’t make the soup sweet but really rounds out the flavors. Nordstrom also uses carrots in their famous tomato soup recipe which is what I was trying create here. Lastly, I think the amount of cream added is more of a preference. I used 1 cup of half and half Vs 2 cups.
Loved it. I added 1 cup of 1/2 and 1/2 and 1 cup of 2% milk. I also garnish with Rosemary. I just think tomatoes and rosemary go so well together.

Added 1 tbsp hot sauce. Max liked, it I needed more seasonings.
Excellent and easy. Made slight modifications based on what I had on hand. Instead of raw garlic, I used a few cloves of garlic I already had roasted. I put the onions in raw. And, I put in a big handful of flat leaf parsley (no stems) and instead of removing after cooking, I just blended them in. Will definitely make again.
Brought it to a dinner party and everyone loved it added some flour to thicken it a bit

Delicious and filling! My daughter who claims to hate tomatoes even ate this! Great for dunking grilled cheese and you can use the leftovers as a yummy pasta sauce!
