Ingredients
- 1 pound ground beef
- 1 tablespoon minced garlic
- 3 cups water
- 4 medium white potatoes, peeled and diced
- 1 medium onion, chopped
- ½ cup chopped celery
- 1 tablespoon dried parsley
- 1 teaspoon dried rosemary
- 1 teaspoon ground thyme
- 1 teaspoon dried oregano
- salt and ground black pepper to taste
Instructions
- Cook and stir beef and garlic in a large saucepan over medium-high heat until browned and crumbly, 5 to 7 minutes.
- Pour water into the pot and add potatoes, onion, celery, parsley, rosemary, thyme, and oregano. Reduce heat and simmer until potatoes are tender, about 30 minutes. Season with salt and pepper.

Pretty nice and heart! Easy to make. But you need like 9 cups of water to cover the potatoes or they won’t cook properly. Also I would add some mozzarella or cheddar cheese to up the flavor.
This reminds of something my mom or grandma would have made back in the day with pantry staples – “simple” as the name states, yet very affordable for large families. While the flavors are pretty basic, you could definitely add in other seasonings to suit your tastes. I would suggest using broth, or a combo of broth and water instead of just water. It makes a very hearty soup and the portions are very filling.
