Simple Cheesy Cauliflower Soup

Ingredients

  1. 1 tablespoon salted butter
  2. 1 medium onion, chopped
  3. 1 (32 fluid ounce) container chicken broth
  4. 1 medium head cauliflower, chopped into small florets
  5. 1 (16 ounce) package aged Cheddar cheese
  6. 5 cups milk
  7. ½ cup all-purpose flour
  8. salt and ground black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and fry until softened, 3 to 5 minutes. Add chicken broth and cauliflower; bring to a boil.
  2. Reduce heat slightly and boil gently until cauliflower is tender, 20 to 30 minutes.
  3. Meanwhile, grate Cheddar cheese. Whisk milk and flour together in a bowl.
  4. When cauliflower is tender, slowly add milk-flour mixture, stirring until combined. Simmer until soup has thickened, about 5 minutes.
  5. Remove from the heat and stir in grated Cheddar until melted and blended together. Season with salt and pepper.
  6. You can use broccoli instead of cauliflower, based on preference. Either way is tasty!

I had to change it to half, as there are only 2 of us. I buzzed up the cauliflower a bit to make it more smooth, but not too much. I was surprised it tasted sweet. Wondering if that’s the onions or the cauliflower…

Simple indeed and overall pretty good. I think it could have used less liquid and some herbs for flavor. Overall pretty good though and one I would make with small tweaks.

Tasty recipe! Cauliflower cut up easily by cutting each of the larger clusters into smaller pieces. I used a Mexican Style Mix grated cheeses – and it still tasted great. I enjoy that the salt and pepper can be added by each person rather than putting these into the soup pot. Enjoy!
