Ingredients

  1. 1 pound Italian sausage
  2. ½ cup diced onion
  3. 1 tablespoon minced garlic
  4. ½ teaspoon Italian seasoning
  5. 1 (48 fluid ounce) can chicken broth
  6. 1 large carrot, sliced
  7. 1 (10 ounce) package frozen chopped spinach
  8. ¼ cup uncooked pearl barley

Instructions

  1. Cook sausage, onion, and garlic in a skillet over medium heat until the sausage is evenly brown. Season with Italian seasoning. Remove from heat and drain.
  2. Add sausage mixture, chicken broth, carrot, spinach, and barley into a slow cooker.
  3. Cover and cook on High for 4 hours, or Low for 6 to 8 hours.

I used spicy Italian sausage (yum!) and instead of frozen spinach, I used a couple of healthy handfuls of fresh spinach. I also didn’t hold back from adding oregano, basil and parsley flakes. The picture I’ve included is the ingredients prior to the four hour (on low) cooking. I used baby carrots and next time, I think I’ll add more. Overall, it’s a keeper!

So, I made this recipe and can’t say I stayed close to the plan but have to say that most everyone is right about the spinach turning slimy… I should have had more italian sausage since I probably had 1/2 lb but still, not very palatable. This is a good soup, and I make it fairly often, although I admit I use the recipe as a guide more than following it verbatim. One look at the profile picture, for example clearly shows tomatoes, although there are no tomatoes in the recipe. I took that ‘advice’ and add a can of diced tomatoes. I often use orzo instead of barley, as well, as it’s easier to find and cooks much more quickly. Also, the slow cooker is great, but this works just as well on the stove and is made pretty quickly (especially with orzo instead of barley). I know, I can hear people complaining now about how much I change the recipe when reviewing it, but it’s a positive review, ok? Calm down.

I’ve made this several times. Sometimes I’ve followed the directions, sometimes I’ve changed the sausage and added more vegetables. Either way, it is delicious and works even in the Texas summer.

This is a very simple recipe. Both my husband and I really liked it. I had a can of spinach instead of frozen, and used a breakfast sausage roll instead of Italian sausage. For the spices I used Herbs de Provence. Also, we ate it after only cooking for about an hour.

I made this to the T with Venison Italian sausage. Turned out really well for me. I added a little more carrot since my carrot was a little on the small side. It didn’t say to thaw the frozen spinach, so I just tossed it in. It began to break apart as it cooked, so no problem there. I love slow cooker meals. DINNER IS DONE! Thanks for great recipe!

Fantastic! I used 4 cups chicken broth, 2 cups beef broth, 1# hot Italian sausage, 1 can tomatoes with chili, mushrooms and carrots. I started with 1/2 cup barley, then added another 1/2 cup. After 4 hours in the slow cooker it was wonderful. Very thick. Probably too thick for most people who really want soup. The taste is hearty, flavorful but not heavy. Thank you for the great recipe!
