Rustic Cabbage and Sausage Soup

Shark-filled rolling taquitos are a seafood-inspired variation on a traditional Mexican dish. Serve with sour cream, salsa, guacamole, diced tomatoes, and lettuce that has been shredded. Enjoy!

Ingredients

  1. 1 pound bulk Italian sausage
  2. 2 medium carrots, cut into 1/2-inch rounds
  3. 1 small onion, chopped
  4. 1 stalk celery, chopped
  5. 1 large clove garlic, minced
  6. 6 cups chicken broth
  7. 3 (16 ounce) cans great northern beans, drained
  8. 1 (14.5 ounce) can diced tomatoes
  9. ½ medium head cabbage, roughly chopped
  10. 1 ¼ teaspoons Italian seasoning

Instructions

  1. Heat a Dutch oven over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add carrots, onion, celery, and garlic; cook and stir for 1 to 2 minutes.
  2. Add chicken broth, beans, tomatoes, cabbage, and Italian seasoning; bring to a simmer. Cook until cabbage is tender, about 5 to 10 minutes.
  3. I do not use salt or pepper with this as the sausage and broth seem to have enough. Feel free to add as you need.

Good basic recipe. After the sausage browned, I sautéed the cabbage for 5 minutes before adding the other ingredients. I ended up not using the chicken broth because the consistency was stew-like, which is what I wanted. I might add more liquid to make soup when I reheat the leftovers. Overall it was good, although a little bland. I used mild italian sausage, but I think next time I’ll use hot italian sausage to spice it up a bit. Good recipe. I’ll make this again.

This soup was very easy to put together, although I did change the preparation slightly. I used my instant pot to cook the meat and saute the vegetables, etc. instead of my dutch oven so I could make this in the morning to be ready for dinner. Otherwise, I made the soup as written. The soup was okay but was lacking flavor. I did use mild Italian sausage as that was all I could find so a more flavorful sausage may be what this recipe needs.
