Quick Ham and Bean Soup

Many Italian families have this sweet rice pie as a traditional Easter dish. However, I cook it more frequently than that because it’s so excellent.

Ingredients

  1. 2 cups hot water
  2. 2 teaspoons chicken bouillon granules
  3. 2 (15 ounce) cans Great Northern beans
  4. ⅓ cup diced carrots
  5. ⅓ cup diced onion
  6. 1 small stalk celery, diced
  7. ½ teaspoon minced garlic
  8. 1 bay leaf
  9. ¼ teaspoon ground black pepper
  10. ½ (8 ounce) pre-cooked ham steak, diced
  11. salt to taste

Instructions

  1. Bring water to a boil in a pot; add chicken bouillon and stir until dissolved.
  2. Drain and rinse 1 can Great Northern beans. Reduce heat to low; stir drained beans and remaining can of undrained beans into bouillon mixture. Add carrots, onion, celery, garlic, bay leaf, and black pepper; bring soup to a boil.
  3. Stir ham into soup, reduce heat to low, and simmer until vegetables are tender, about 30 minutes. Season with salt.

I took the advice of other reviewers – I used chicken stock instead of water, added twice the amount of garlic (we’re garlic lovers), no salt, used the bean juice, brought to a boil and cooked low and slow for about 45 minutes. The two of us ate every morsel at dinner. No leftovers. Easy and awesome!

Wow. This is good. Just like I remember from my childhood. I followed the recipe pretty much exactly. I had a ham bone that used to flavor the base. I just boiled it for a bit in water before starting the recipe. This is a keeper.

I made this with left over ham from Christmas. I cooked the ham bone and soaked white beans the night before. I added the ingredients in the recipes but also added ham bouillon cubes and 1 teaspoon of cumin and 1/2 teaspoon of red pepper flakes. I did not add salt. I wanted a thicker sauce so to thicken the sauce I used a handheld soup blender.and place it down into the soup in the crock pot and blended some of the beans and ham. This made a smoother thickened soup.

Delicious and easy! Used up ham bone and simmered for about 45 min. then added carrots, the beans last so b they wouldn’t get mushy.
