Ingredients
- 8 slices bacon
- 1 cup chopped onion
- 4 cups cubed potatoes
- 2 (10.75 ounce) cans condensed cream of chicken soup
- 2 ½ cups milk
- salt to taste
- ground black pepper to taste
- 1 teaspoon dried dill weed
Instructions
- In a large saucepan, cook bacon until crisp. Remove bacon, and set aside. Drain all but 3 tablespoons bacon fat from the pan.
- Brown onions in bacon fat over medium heat.
- Add potatoes, and enough water to cover. Cover and cook until potatoes are tender, 15 to 20 minutes.
- Stir together soup and milk until smooth; add to potato mixture. Heat, but do not boil. Add salt and pepper to taste, and stir in dill weed. Crumble bacon; stir in just before serving soup, or sprinkle on top to garnish.

First time making this but is so good and easy to make. The only concern I had is that the potatoes had to be slightly cooked in water, then add other ingredients. It didn’t state if the water should be drained after cooking, so I did drain it because I didn’t want to water the soup down? I also added some chopped red pepper (1/4 cup) which added color and flavor. So other than the one question, it was awesome!!

Great base recipe! You can adjust and add additional things to your liking. Agreed you don’t need to drain the potatoes because the starch water will thicken the soup up. But if you feel it’s too watery then maybe drain a little. Recipes always need some testing to make it your perfect thing.I added some sour cream and cheese to make it creamier and flavorful. I also added spices like celery salt and some chicken bullion to the water to heighten the taste. Ended up very good. Feel free to experiment!
I made it for the first time tonight, and it was delicious. I made some of the changes others made – plus I cooked it all in a crockpot. I used ham instead of bacon. I used chicken broth instead of water. I used a little less milk, and I added some potato flakes to thicken it up. And NO dill — yuck. I also used onion salt, minced onion, and onion powder in place of an onion, which I am not allowed to have.

I used shredded hash browns and 11/2 cup of milk 1cup of heavy cream. Yum
I made this last night, and it was delicious. I didn’t have Cream of Chicken so I substituted Cream of Mushroom, and instead of serving broccoli on the side I steamed it and added it to the soup at the end. I look forward to trying the recipe as written next time we have this soup, and we will definitely be having it again!
I cut the ingredients by half. I’m the only mouth to feed in my house. It was very delicious. I wouldn’t hesitate entertaining guests with this recipe. Of course, with full ingredients.

I drains most of the water out of the potatoes after cooking them just to give a little more starch flavoring. but I used cream of chicken and herbs. Somehow it came out to be smoky but it was good. Between two people, it was gone in a day! going to fix it again soon!

Hold back some of the cooking water and add it back a little at a time after the soup is cooked. That way you will get the consistency you want. I think the secret to any good potato soup is to add cream of chicken soup. It doesn’t always need cheese that way.

I made this when my daughter (suffering with mouth sores from chemo) asked for something soft and yummy to eat. I made it quickly and easily after getting home from work late. I added about 1/2 cup of mild cheddar to thicken a bit more. She enjoyed it very much and was very grateful to get it. Thanks for a quick, easy, and great tasting recipe.
This was very good for how simple and quick it was to make. I had all the ingredients on hand, except for fresh potatoes. I subbed frozen diced potatoes and added much more seasonings including black pepper, garlic powder, and onion powder. I boiled the potatoes in chicken broth instead of water. Other than that, I followed the recipe. I would make it again! Didn’t have any leftovers. I’ll add shredded carrots next time to get more veggies in

made it with 1 and a half cups of milk. Added one celery stick chopped, a quarter teaspoon of chopped garlic. tastes great. still less creamy than I thought. will try cream cheese next time. instead of bacon, I used half a package of breakfast sausage chopped.
