Ham and White Bean Soup

One of my family’s favorite soups is this one, which contains ham, beans, and cabbage. It works well in chilly weather. Add a second can of white beans if you like beans.

Ingredients

  1. 1 tablespoon olive oil
  2. 1 onion, diced
  3. 1 ½ teaspoons Italian seasoning
  4. 1 quart chicken broth
  5. 1 (15.5 ounce) can white beans, drained
  6. 1 (14.5 ounce) can petite diced tomatoes
  7. ½ head cabbage, shredded
  8. ¾ pound ham, diced
  9. 2 stalks celery, chopped

Instructions

  1. Heat olive oil in a soup pot over medium-high heat. Cook and stir onion in hot oil until tender, about 5 minutes. Season with Italian seasoning; cook and stir for 1 more minute.
  2. Stir in chicken broth, white beans, tomatoes, cabbage, ham, and celery; bring to a boil. Reduce the heat to low and simmer until celery and cabbage are tender, 15 to 20 minutes.

Great easy recipe. Used chopped kale salad mix that was just a bit beyond salad good (but not yucky) & fresh herbs from my garden. May add the second can of beans & fresh ground pepper.

I used dried beans and cooked those with a ham bone to flavor the beans. This allowed me to omit the chicken broth in opt for the bean/ham bone broth. This was very delicious as it is. However, I will be adding garlic and red pepper flakes next time I make it.

I love this recipe. Since this only calls for half a head of cabbage like to chop up all the ham and cabbage and divide it in half and throw half in a freezer bag so I can make another pot of soup quickly. Quick and easy and perfect for New Years Day hangover.

I added 1 extra liter of water and 2 chicken bouillon cubes. I love cabbage and ham so I added a bit more than the recipe called for. If you’re a bean lover, definitely add the second can. Came out delish!

This one is a goodie!!! I made a batch of fresh pinto beans, in place of the canned and used the pinto bean broth instead of the chicken broth. I substituted white rice in place of the potatoes and I added a few stalks of carrots. Amazing!!!

Only thing I did differently was add finely chopped red pepper (only half) and 3 more cups of water along with the broth. Otherwise same portions and it was yummy! I also did add spice/hot sauce because I love spicy soups!!
