Ingredients
- 3 tablespoons olive oil
- 3 cloves garlic, chopped, or more to taste
- 2 onions, chopped
- 5 carrots, sliced
- 4 cups chicken broth
- 2 (15 ounce) cans diced tomatoes with garlic and oregano
- ½ cup red wine (Optional)
- 1 (16 ounce) package frozen green beans
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (10 ounce) package frozen chopped spinach
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh oregano
- salt and pepper to taste
- ½ cup seashell pasta, or more to taste
- ¼ cup freshly grated Parmesan cheese, or to taste
Instructions
- Heat oil in a large pot over medium-low heat. Add garlic; cook and stir until fragrant, 2 to 3 minutes. Add onion; cook and stir until slightly softened, 4 to 5 minutes. Add carrots and stir until heated through, 1 to 2 minutes.
- Pour in chicken broth and diced tomatoes; bring to a boil, stirring frequently. Add red wine, reduce the heat to low, and stir in green beans, pinto beans, spinach, basil, oregano, salt, and pepper. Bring to a simmer, then reduce the heat to medium-low and continue to simmer until vegetables are tender, about 40 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook seashell pasta in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain pasta, then stir into soup. Ladle soup into bowls and top with Parmesan cheese.
- You can substitute great northern beans, black beans, or kidney beans for the pinto beans if desired.
- You use 1 teaspoon of dried oregano and 2 teaspoons of dried basil instead of the fresh amounts listed.

This has become a fall family favorite!
This was really great. I needed to make it vegan so I substituted vegetable stock. They only thing I would do different is I would not add the pasta to the soup. It soaked up so much of the liquid I had to add additional stock when I went to use the left overs. I will add past to the bowl and pour over the soup

I’ve made this recipe about ten times and each time it turns out just as delicious as the first time, I do leave out the green beans but it’s just as good!!!

Well, I have a hard time keeping on track. That being said, I added Jimmy dean pork sausage, corn, fresh ginger root! I also omitted the red wine. Was AMAZING!
Great, easy recipe. I Made a few alterations. skipped the spinach and carrots and added a 16 oz bag of frozen mixed green beans,carrots and corn. Used crushed tomatoes with olive oil and sea salt. Substituted garbanzo beans. Added tbs of ground oregano and used vegetable stock instead of chicken.

A great, easy soup and made the house smell wonderful. I wouldn’t change a thing, although I ADDED browned ground turkey just because we are meat lovers (definitely not necessary).
I followed the recipe, but did not include the wine. I also added black eyed peas, and it was a hit with the entire family. Makes a large pot full. Fantastic and healthy!
The more I make this, the more I like it. It has become a staple of my diet, because I can make a batch on Sunday, freeze it in individual portions, and have it for lunch at work all week. (Note: if freezing, do not add the noodles until the moment before you put it in the freezer, to prevent over-absorption of the liquid.)
