Clean, tasty, and warming red lentil soup! Prepare dry ingredients and spices, then add any available vegetables.It was made by me with kale, cauliflower, and carrots.

Ingredients
- 2 teaspoons olive oil
- 1 head cauliflower, chopped into small florets
- 2 carrots, chopped
- 2 cups boiling water
- 1 cube vegetable bouillon
- 1 (14 ounce) can reduced-fat coconut milk
- 1 cup red lentils
- 1 teaspoon garlic powder
- 1 teaspoon dried onion flakes
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon ground turmeric
- ½ teaspoon ground cumin
- 1 bunch kale leaves, stems and inner ribs discarded, leaves coarsely chopped
Instructions
- Heat olive oil in a large pot over medium-high heat. Add cauliflower and carrots; saute until softened, 7 to 8 minutes.
- Pour boiling water and vegetable bouillon into a bowl and stir until dissolved. Add broth and coconut milk to cauliflower mixture. Bring to a boil.
- Stir lentils, garlic powder, onion flakes, curry, paprika, turmeric, and cumin into the pot. Cover and let simmer until lentils are fully cooked and tender, about 20 minutes. Stir in kale and let sit over low heat for 5 minutes. Remove from heat and serve.
- Feel free to use chicken or vegetable bouillon. If you are using chicken bouillon the soup is not longer vegetarian.

Really good! This is better after it cools or even the next day so the flavors fully meld. I always struggle when approx vegetable measurements aren’t provided. A small head of cauliflower vs a larger one yield way different amounts! Mine was larger so I cubed approx 3c and then 1.5c carrots. I know the recipe calls for dried onion flakes but choose to mince 1/2c onion and add with the carrot/cauliflower sauté. I also added a couple cloves of garlic, minced the last min of cooking before adding the broth. This meant I nixed the dried onion flakes but still kept the tsp of garlic powder. The result was tasty! But….pretty thick. I like thick soups so I didn’t mind but if you want more liquid- I would consider 2c cauliflower, 1 c carrot and, after bringing the broth/coconut milk to a boil in step 2, eyeball and consider adding another cup of broth. I didn’t nor wouldn’t as I liked this thick, stew-like soup-curry but it’s not really a soup. I think you also need to monitor and make a judgement as to how much kale to add at the end. If I had used my full “bunch” my result would have been even thicker! Used half and was wonderful!! Thank you Hedz!! Will make again!
Great flavor. I couldn’t find red lentils so I used green. Had to add a lot more vegetable broth and coconut milk to get a soup so I had to add more spices. It is the bomb.
This recipe was actually delicious! It drives me to crazy when people write a review after completely changing the ingredients and then do not like it, SMH.
Good, mild mix of spices because I like gentle spicy, rather than burning hot. I make it in advance and enjoy it over several days with various toppings. Maybe avocado, maybe grated Parmesan cheese, maybe chicken, shrimp, maybe sun-dried tomato, maybe even drop a raw egg and let it cook on top of the soup.
I made this with broccoli and yellow lentils rather than cauliflower and red lentils and used only water because I didn’t have vegetable stock.
My husband loved it! He doesn’t like hot and spicy dishes, so this was mild for his taste. I put half into another pot and spiced it up with curry and chili paste. YUMM
Tasty. Was much better before I added the kale, which just crowded out the other ingredients and dulled the flavor. If you really do add an entire bunch of kale, it becomes kale soup, not lentil soup. Cauliflower was a nice choice to complement the lentils.
Hearty and tasty. I’m making it again and adding a few more veggies, will see if I like that even better.
So yummy and super easy to make! Definitely will be adding to my weeknight rotation. Makes great leftovers too for lunches through the week!
This soup was very easy to make and delicious! I used vegetable broth instead of water and the broth cube. I also used onion powder instead of flakes . I forgot to mention that I also used spinach instead of kale.

Made this soup for lunch today and it was super yummy! I left out the onion flakes (didn’t have any) and added one chopped sweet onion to the cauliflower and carrots, used 2 cups of chicken broth so left out the bouillon cube and used a regular can of coconut milk. Was a cold day here today and this not only tasted delicious but warmed us up. Thanks for sharing.
