- 2 ¼ teaspoons kosher salt, plus more to taste

- Right before serving, toss together reserved cucumber slices, feta cheese, mint, honey, and a pinch of salt in a small bowl.
- Stir and ladle gazpacho into 4 shallow bowls. Top evenly with cucumber-feta mixture and drizzle with olive oil.

I love this , a few drops of honey makes it taste so good! but try not to use supermarket honey, use organic or from a specialty shop!
LOVED it! Had a honeydew which was not really sweet and used that. Added some garlic and skipped the honey. Amazing!
It was really great! The first time I made it, I did not have any honey, but found it sweet enough. Used two large English cucumbers and a half of a honey Dew Mellon, plus I used a little more mint. The second time I made it, still no honey, used two tablespoons Amaretto, even better! Next time maybe Creame de Mint?
