Ingredients
- 2 tablespoons canola oil
- 1 onion, chopped
- 1 tablespoon chopped garlic
- 4 cups canned tomatoes
- 3 slices bread, cubed
- ¼ cup chopped fresh basil
- 1 tablespoon brown sugar
- 2 tablespoons butter
- 2 cups chicken broth
- salt and ground black pepper to taste
Instructions
- Heat oil in a Dutch oven or heavy stockpot over medium-low heat; cook and stir onion and garlic in hot oil until tender, about 5 minutes. Add tomatoes to onion mixture, crushing with a potato masher. Stir bread, basil, and brown sugar into tomato mixture and simmer until bread is completely saturated and starts to break down, about 10 minutes.
- Pour tomato mixture into a blender no more than half full; add butter. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to Dutch oven over medium heat; add broth and simmer until heated through, about 5 minutes. Season soup with salt and pepper.
- I recommend using home-canned tomatoes.
- Substitute 1 tablespoon dried basil for the fresh basil, if desired.

Rich and Delicious!!
I had some Basil Biscotti that I wanted to use in a recipe and decided to make this Creamy Soup. I substituted Sherry for the brown sugar to go along with the Lobster stuffed puffed pastry I’m serving this with (it called for Sherry in that recipe). It’s beautiful and very creamy.
Made this on a whim and it was delish! Used vegetable broth and served with grilled cheese! Totally comfort food

This is a terrific, tasty, easy to whip up soup! I’ll never use canned tomato soup again when I can make this flavor loaded soup with either bread or puréed cauliflower in place of the usually added cream in 20 minutes or so. Thanks for a favorite recipe!
this was like pasta sauce – but without the tomato taste! If I were to make it again (but I won’t) I’d use less bread, more broth and more salt…that might make it less like sauce and more like soup.
Loved this!! I doubled the recipe for a large crowd, substituted gluten free bread and 1/3 of the tomatoes with roasted peppers and finished off with tomato, basil goat cheese!!! Yummmmmm

I’ve been making this for a while now I think I should rate it, can’t believe I haven’t yet. I like this very much, I use tomatoes out of my garden (I do prepare my tomatoes as if I were going to can them first) I follow this recipe except I do not put the bread in it. I make my own croutons and add some to each bowl. This thickens it. The croutons are also favored with parmesan cheese and that also adds to the soup.
Wonderful and easy. Did taste a bit like spaghetti sauce so I added Parmesan cheese to mellow out the saucy taste
I make this vegan so use vegetable broth instead of chicken broth and Earth Balance instead of butter. I double the recipe because my family loves it and the published recipe just isn’t enough!
I used dry basil, reduced the brown sugar a bit. Love it that it uses no cream yet is so creamy!

I followed this recipe to a t except I used 1 TBSP dried basil instead of the 1/4 C fresh basil and this soup was EXCELLENT!!! This will definitely be my “go-to” tomato soup!!!! Thank you for this excellent soup!!!! My husband and I almost ate the entire recipe, also!!!!!
Did the directions exactly and it turned out fantastic. Instead of chicken stock I used a vegetable cube with two cups of water. And I used an emulsion blender instead of transfering small amounts to a regular blender

Loved this soup. Turned out much tastier than canned store bought. I didn’t have an onion, or fresh basil, so I substituted dried basil. I also used sourdough bread and my immersion blender which was less of a mess or dishes to clean up after. I will be making this soup again soon. So easy when everything I need is always a staple in the kitchen.
